Spread and Quail Eggs on Crackers
Hello everyone ~ Happy Monday! Hope you all had a wonderful weekend. I would like to share with you a quick and simple finger food as afternoon snack that I made yesterday. This finger food is also great for party and can be ready in no time. Please come and enjoy this pretty snack with a good cup of hot coffee with me 🙂
Here is the recipe (adapted from Magic in Eggs with slight modification)
8-12 Quail eggs
5-6 or more Cherry tomatoes
1 can Seafood spread with Mayonnaise or tuna
1/2 packet Cheese rice crackers
a dash of black and white ground pepper
Methods:
- Cook hard boil eggs until set. Shell and cut into halves. Dice cherry tomatoes.
- Mix seafood spread and dice tomatoes together with a dash of black and white ground pepper.
- Spread mixture on cheese rice crackers.
- Place quail eggs and more diced tomatoes on top.
Enjoy!
Hi Ann! Im thinking of bringing this to a gathering. My concern is will the crackers turn soft when left outside? How to prevent it from turning soft? Thanks
Hi Ai Li, Is not suitable to leave the crackers outside for too long. If you want to bring the crackers to a gathering, either you store them in an airtight container or prepare the filling in advance and do the spreading at the gathering.

Lyn ~ you can also ask your girls to help you too. Just add any spread you like on the crackers, really nice.

wow it didn't occur to me that i can create something so dainty and "expensive" looking from all these economical ingredients which i have at home!
This is really a simple, fast and pretty snacks! The combinations of seafood tuna, cherry tomatoes and quail eggs must be very delicious! Must try this and I'm sure my girls will love it! I love seafood tuna and the salmon one is nice too! 😀
