Black Forest Cake
- Ingredients:
Chocolate Sponge Cake
3 Eggs
20g Water
165g Optima flour/Sponge cake mix
48g Melted Butter
1 tsp Vanilla extract
1/2 tbsp Chocolate paste
1/2 tbsp Chocolate emulco
- Add eggs, water and optima flour and whisk at high speed till thick and fluffly then add vanilla extract, chocolate paste and chocolate emulco, mix well.
- Lastly add in melted butter and mix well again.
- Pour batter into a 8″ round cake tin (lined) and bake in preheated oven at 180C for about 20-30 mins.
- Remove sponge cake immediately from cake tin after baked and leave cake to cool then cut to 3 slices.
Mousse filling
60g Semi sweet chocolate – chop to small pieces
40g Whipping cream
100g Fresh topping cream and 85g Whipping cream
- In a large bowl, chop semi sweet chocolate to small pieces. Boil 40g whipping cream and pour on to the chocolate pieces.
- Use a hand whisk to stir chocolate cream till smooth or you can put the bowl of chocolate cream over a pot of hot water for 1 minute and stir chocolate cream till smooth and add 1 tsp vanilla extract, leave to cool.
- Whisk 100g fresh topping cream together with 85 whipping cream till peak form (not too stiff) and fold into the chocolate cream with a hand whisk and put chocolate mousse in the fridge for few minutes till semi-set.
Topping
- Place the base of chocolate sponge on cake board and brush with some kirsch syrup.
- Spread its top with whipped fresh cream and strew the dark sweet cherries over the fresh cream.
- Place the 2nd layer of chocolate sponge on top of cherries, brush kirsch and spread semi-set chocolate mousse evenly on cake follow by the last slice of chocolate sponge with kirsch sugar syrup.
- Finally spread whipped fresh cream all over the cake and decorate cake as desire or with red cherries on top of the cake and chocolate rice or flakes at the side.

I would like to do this cake 1 day in advance. Do you think the sponge cake will be dry? And also the cream will it still be good and retain it shaped?

Hi Ling, The cake is still moist and soft for 2-3 days with the kircsh syrup added. Store the cake in the fridge before consuming and do not leave the cake at room temp for too long to retain the shaped as you know the weather here is very hot.

Thank you for your fast reply. Will it be fine if I omit choc Emulco? I do have choc paste, does it mean I added 1tsp of choc paste? Can I check with you what is topping cream? Can I used diary whip cream?

Hi Ling, no problem to omit the choc emulco. Just add the choc paste 1-2 tsp to make the cake looks darker. Topping cream is the same as diary whip cream that has a sweet taste. You can use either one.

I am planning to make this cake but wondering if choclolate emulco and paste are two different things. I could only find chocltae paste 🙁 can I use 1tbsp of it? Also can you pls explain what is fresh topping cream? Is it whipped cream? One that we get it in can spray bottle.

Yes you can use 1 tbsp chocolate paste instead. Fresh topping cream is those that for spreading on cake. You can buy the Pour n Whip from the supermarket. Yes is quite similar as the can spray bottle.

Yes you can mix the cocoa powder with 2 tbsp hot water. There is also chocolate sponge mix available at the baking supplies store.
I love the cake very much…so pretty…however, in the US, they don't sell sponge mix or optimal flour…can I substitute for cake flour? Ty

Chocolate emulco is a very dark paste and the chocolate paste with the chocolate flavour. Nowadays I only use chocolate paste alone but add extra paste to the batter to get darker colour.
