Yoghurt Honey Madeleines

I made these cute Madeleines based on the cookbook 優格点甜点厨房(Yoghurt Dessert Kitchen). The recipe is quite easy to follow without using the cake mixer and can be done within 15 minutes minus the baking time. These Madeleines are a bit on a dry side but the texture was soft because of yoghurt added and  had a slight fragrance of honey.  They tastes better the next day, just store them in an airtight container in room temperature. Good to go with a cuppa of coffee.

Yoghurt Honey Madeleines
      Ingredients: makes 15

          1 Egg (70g)
          20g Honey
          50g Sugar
          40g Natural yoghurt
          90g Plain flour 
          1/2 tsp Baking powder
          70g Melted butter


          Methods:
    • Grease mould with some soft butter and set aside.
    • Gently whisk egg, then add in sugar and honey into it. Whisk till sugar dissolved.
    • Add in natural yoghurt and whisk vigourously till batter becomes foamy.
    • Then gradually add in sifted flour and baking powder into batter mix till combined and becomes a thick paste.
    • Lastly add in melted butter in two batches and mix well.
    • Scoop batter into mould with a spoon.
    • Bake at preheated oven 180C for about 12 minutes or skewer inserted comes out clean.
    • Remove Madeleines from mould and place on wire rack to cool.

    These are the small cakes, so just place the tray in the center rack of the oven.

    very pretty! i think my madelienes moulds are quite similar to yours but the last time i made, the lines didnt come out clear, i think i shld butter them more:)

    they look a nice firm texture with a dense crumb. Oliver adores madeleines and I haven't made any in a while. We've got yogurt in the fridge – so may have to made some 🙂

    This is such a lovely recipe, thanks for sharing Ann. No beating stiff peaks, no creaming – sounds manageable for me :). I hv never seen a madeleine mould before…hmmm must go and search for it.
