I made these Mango and Pistachio Friands on a lazy afternoon. Friands are super easy to make and are healthy too. Just spend a good 15 minutes or less to do the mixing and you're ready to push the friand pan into the oven. Really yummy with the mango slices on top and very fragrant with the sweet smell of the grounded pistachios. Due to the small recipe I only managed to get 4 pieces of Friands and we polished them off over a cup of coffee.
Mango & Pistachio Friands
Ingredients: - makes 4-5
60g Icing sugar
30g Plain flour
105g Egg whites
95g Butter, melted, cooled
1-2 Mango, sliced
Preheat oven to 180C. Grease friand pan with butter or cooking spray (may use muffin pan if you don't have a friand pan). Process pistachios in a small food processor until ground. Transfer to a bowl. Sift over the icing sugar and flour.
Use a for to whisk egg whites in a large bowl until frothy. Add butter and pistachio mixture. Stir gently until just combined.
Fill prepared pans. Lay mango slices over batter and bake for 25-30 minutes or until firm. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely. Dust with icing sugar or snow powder.
