Mango and Pistachio Friands

I made these Mango and Pistachio Friands on a lazy afternoon. Friands are super easy to make and are healthy too. Just spend a good 15 minutes or less to do the mixing and you're ready to push the friand pan into the oven. Really yummy with the mango slices on top and very fragrant with the sweet smell of the grounded pistachios. Due to the small recipe I only managed to get 4 pieces of Friands and we polished them off over a cup of coffee.


Mango & Pistachio Friands

    Ingredients: - makes 4-5
      70g Pistachios
      60g Icing sugar
      30g Plain flour
      105g Egg whites
      95g Butter, melted, cooled
      1-2 Mango, sliced





      Method:
  • Preheat oven to 180C. Grease friand pan with butter or cooking spray (may use muffin pan if you don't have a friand pan). Process pistachios in a small food processor until ground. Transfer to a bowl. Sift over the icing sugar and flour.
  • Use a for to whisk egg whites in a large bowl until frothy. Add butter and pistachio mixture. Stir gently until just combined.
  • Fill prepared pans. Lay mango slices over batter and bake for 25-30 minutes or until firm. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely. Dust with icing sugar or snow powder.

芒果开心果Friand小蛋糕


      才料:做约4-5个
      70克 开心果
      60克 糖粉
      30克 面粉
      105克 蛋白
      95克 牛油,融化,待凉
      1-2 个 芒果肉,切片

      做法:
  • 烤箱预热致180度。把friand模涂上少许牛油方便脱模。(没有friand模也可用满分模代替)。把开心果磨成粉,倒入一个碗中。筛入糖粉和面粉搅匀。
  • 将蛋白稍微打致起泡,把蛋白和倒入干粉里,拌匀。
  • 把面糊倒入模内。送入烤箱烤约20分钟致有点金黄色。 从烤箱取出后,蛋糕先留在烤模中,待5分钟后才放到网架待凉。洒上糖粉或防潮粉做装饰。

    It's mango season in my place now. There is a bag of mangoes sitting in my fridge waiting to be clear :D
    Your friands looks so yummy to go with a cuppa of hot tea. I must bake them this afternoon. Can I replace pistachio with almond meal?

      Can you see the nice golden colour of the mango? I harvested from my mango tree. It's very sweet and firm. I also made some mango dessert yesterday :D
