Almond Potato with Salmon Flakes Croquettes
Since now is mid term school holiday, I oven-baked this Almond Potato with Salmon flakes Croquettes for the kids gathering over last weekend.
Ingredients:
500g Potatoes~peeled and quartered
1 Egg~separated
15g Butter
1 can Salmon or Tuna flakes~drained
Salt and Pepper to taste
1/2 cup Plain flour
Flaked almonds, for coating
Method:
- Cook potatoes in microwave or in a large pot of boiling water until tender, drain.
- Mash potatoes in a large bowl, add egg yolk and butter stir to combine.
- Then add in salmon or Tuna flakes mix well and add salt and pepper to taste.
- Spread some plain flour on to a small tray.
- Shape potatoes into a small oval shape and roll them in the plain flour, shake off excess.
- Dip into lightly beaten egg white, coat with flaked almonds, pressing them on firmly.
- Place on prepared baking lined tray and refrigerate for 30 mins.
- Bake at preheated oven 200C for 20 mins or until golden.
- Serve with mayo and mustard sauce.

What a fantastic idea Ann..like i said you're so creative in your cooking. I just remembered I have almond nibs sitting long enough in the fridge. Hope it can still be used. Will try this dish soon. Thanks for the idea *muaks* hehehe
I've never made croquettes before, mainly because most recipes involve frying. I like that this recipe uses baking instead =] And I love the almond coating too! Definitely my type of snack! =D

Great recipe. Usually would do this with salmon but would dip the patty with breadcrumbs instead of almond. But this is a cute size .. great for finger food parties.

Now, here's a very simple and yet fantastic idea for an appetizer.
I do love potatoes…maybe a little too much;o) Pairing that with slivered almonds has given it a very creative look. The contrasting textures is very interesting indeed.
