Braised Chicken Thigh 卤鸡腿
Besides prawns, I also love to cook chicken very much. Here is a simple and tasty recipe that I used to cook at home.
1 kg Chicken thigh or whole chicken, chop to pieces (not too small)
Seasoning:
1/2 tsp Salt
1/2 tsp Sugar
1/2 tbsp Light soy sauce
1/2 tbsp Dark soy sauce
2 1/2 tbsp Oyster sauce
1 tbsp Sesame oil
1/2 tbsp Ginger juice
1/2 tbsp Cooking wine Hua Tiao Chiew (花调酒)
Marinate the chicken thigh together with the seasoning overnight.
3 tbsp Sesame oil
20g Ginger ~ shredded
2 tbsp Dark soy sauce
300 ~ 350ml Water
1 tbsp corn flour + 2 tbsp water as thickening
Method:
- Heat up 3 tbsp sesame oil in wok and saute shredded ginger until fragrant.
- Add in chicken thigh together with the sauce with extra 2 tbsp dark soy sauce and stir fry until aromatic.
- Add in 300ml water, boil and lower heat~cover~simmer for about 25-30 minutes.
- Lastly thicken with corn flour water and serve.

Some years back when I was in London, a colleague told me to do this but I just dont know how/where to start and let the chicken thighs sit in the fridge until I cant remember what happened the the chicken!!

gosh this is not smart that i'm looking at your delicious photos when i'm in my meeting at work and hungry! simple and tasty is right. but due to me being a health nut, I would have to remove the skin. as much as i love it, my arteries wont be so happy. unfortunately i have high cholesterol! boo hoo!
