#BundtAMonth: Best Banana Bundt Cake
I’ve heard a lot of good reviews on Dorie Greenspan’s recipes and this Banana Bundt Cake is one of the most popular, have been tried and tested by many in the blogosphere. Since I still have some overly ripe bananas in my pantry, I quickly made this very moist and packed with banana flavour cake. The recipe is super easy to follow and I didn’t add any frosting on the cake but dusted with some icing sugar as I wanted the original taste. Definitely a keeper for this awesome recipe !!!

Ingredients
- 350g Plain flour
- 2 tsp Baking soda
- ½ tsp Salt
- 225g Butter, at room temperature
- 170g Sugar (sugar already reduced to half)
- 2 tsp Vanilla extract
- 2 Eggs (70g each)
- 4 Very ripe banana, mashed (370g without skin)
- 1 tub Sour cream/plain yogurt (200ml)
Instructions
- Preheat oven to 180 degrees C. Grease bundt pan with butter or cooking spray.
- Sieve flour, baking soda and salt together in a bowl and mix well, set aside.
- In a mixing bowl, beat butter until creamy. Add the sugar and beat at medium speed until pale and fluffy. Beat in vanilla, then add the eggs one at a time, beating for about 1 minute.
- Reduce the mixer speed to low and mix in the mashed bananas.
- Finally, mix in half the dry ingredients, all the sour cream and then the rest of the flour mixture and mix well.
- Scrape the batter into the pan, tap the pan on the counter to debubble the batter and smooth the top.
- Bake for 65-75 minutes (I baked for 60 minutes) or until a skewer inserted into the center of the cake comes out clean.
- Transfer the cake to a rack and cool for 10 minutes before unmoulding onto the rack to cool to room temperature.

Hi Elaine, hehee… this bundt pan was a gift from my US friend. The pan here is very expensive but I like the Microplane, very useful 😀

Hi Sarah, Yes this bundt tin is a standard size, for 10 cup but I only used half recipe.
if anybody is interested to get Nordic Ware Heritage and the traditional with handle they are less 20 at Totts now…I think the sale ends on SAT

Hi Ann, I love this cake of yours! Would like to check with you if you ever encounter problems unmoulding cakes from non-stick pans? I have tried baking cakes using non-stick pans and they got stuck to the pans. Do you have to grease and flour the pans although they are non-stick? I want to get a non stick Kugelhopf pan but could not find. Do you know where I can get one?Yin
Hi Yin, I always used the cooking spray to grease the cake pan even it is stated non-stick so that my cake can comes out nicely in shape. You can buy a small can of cooking spray from PH or Sunlik or grease the pan with butter and dust with flour. I think I saw PH has the Kugelhopf pan and Sunlik too.

You don't actually need a bundt pan to bake this, a muffin pan is equally good.
