Hazelnut Cookies
Ingredients:
300g Soft Butter
225g Sugar
1 Egg white (about 40g)
1 tsp Vanilla flavor
300g Plain flour – sifted
225g Ground hazelnut
1 tsp Cinnamon powder
Method:
- Mix sifted plain flour, ground hazelnut and cinnamon powder ~ well together. Put aside for later use.
- Cream soft butter, sugar and vanilla flavor until light and fluffy at medium speed.
- Change to low speed, slowly add in egg white and continue beating, then gradually add in flour ingredients, mix well and stop machine. (Do not beat too long)
- Use spatula to scoop dough into the cookie press. (can use piping bag)
- Press dough through press on to baking tray (lined with silicon paper) about 1/2″ apart.
- Bake at preheated oven 180C for about 12 mins or golden brown,
- Allow cookies to cool on baking tray one minute then remove to wire racks to cool completely.
- Then store in airtight container.

Leave butter in room temperature until butter becomes soft.

This is used of hazelnut powder and is a good combination with cinnamon powder, you may like to try this 🙂
I've heard of almond cookies, but never hazelnut ones! Lovely! I wonder if there is a slightly nuttier taste?

Hazlenuts are my favorite nuts! Though now in summer, I am buying a lot of pistacchios here in Santa Monica California, they are delicious!

I love hazelnuts! I just bought a metric scale so that I could make recipes like this with greater ease and comfort as I am terrible at math and had a difficult time converting the ingredients into our standard measures. I cannot wait to try these. I know I will love them!

Yes, It's really fun and enjoyable to have family member to do things together in the kitchen.
Our kids sometime help me to mix batter and making gingerbread cookies with their little hands.
I love hazelnuts! Those cookies look so yummy. My daughter and husband would love these little nibbles! I will have to try these one of these days.
These look wonderful. I love my cookie press. My Mom and my Aunts and Grandmom used a cookie press for Christmas cookies. It was like a fun assembly line in the kitchen. One Aunt would measure, my Mom would mix it all into the mixer, my Aunt would prepare the cookie sheets and put the cookies in and out of the over, another Aunt would decorate the cookies with sprinkles. They would all pack the cookies to take home in little metal tins to give to their friends as Christmas gifts. What did I do? I was the official taste tester:)
