Light Meal – The Leftovers
The roast chicken and potatoes were the leftovers from Sunday dinner. Not going to be a waste, I made a light meal lunch on the next day.
Slice some fresh tomatoes, grated carrots and some lettuce and put aside. Tear the chicken meat into pieces and sprinkle black pepper and salt, toss it. Put chicken meat and potatoes in microwave safe container and put on high heat for 2 mins.
Then place lettuce, chicken pieces, grated carrots on wrap. Add some mustard and ketchup over it and roll it up.
Enjoy!
Thank you, Doria. I understand what you mean and thank you for following my site.
Have a nice day 😀

I like to use leftovers in wraps, too. You had a question about the tapioca in the beer-braised short ribs recipe. The tapioca is there to absorb the liquid.

Excellent idea to use wraps. I don't use them enough, and they certainly do dress up a leftover.
