Fried Eggs with Long Bean
3 Eggs (lightly beaten) + 1/2 tsp light soy sauce
250g Long Bean (rinse and diced)
1 pip Garlic (chopped)
Method:
- Heat up a non-stick pan and add about 2 tbsp oil~add chopped garlic, diced long bean with 1/2 tsp salt. Fry long bean till soft and fragrant then add some pepper on it.
- Spread out long bean evenly and add a little more of oil, pour beaten eggs over the long beans.
- Lower heat to medium and wait for about 2-3 mins for the eggs are set and overturn eggs until the eggs are just cooked.
- Serve immediately.
Long beans are eaten both fresh and cooked. They are at their best when young and slender and are often used stir fried with chillies in Malay cuisine.

CBL: I also like to cook with chilli like sambal belachan. But because of the kids, so have to cook simple.
This is one of my husband's fav dishes but I don't really like it, so I hardly cook this dish. 😛
(I prefer fried long bean with dried shrimp or ikan bilis).

Another nice way to eat beans. Sometimes I find that some people just hate certain vegetables because their mother insisted on serving them plain boiled (and to a mush) with nothing more than salt and pepper sprinkled over them – if even that. This is often the case for peas, green beans and spinach -although the spinach was swimming in cream and nutmeg as well.
