440g Cold Egg Whites (Store in fridge before use)
3 Egg yolks
40g Cold water
315g Plain flour
1 1/4tsp Baking powder
1 tbsp SP or ovalette
250g Melted butter with 3/4 tsp vanilla powder
100g Almond powder
- Whisk cold egg whites, egg yolks, cold water, sugar, SP, plain flour and baking powder at high speed till thick.
- Lastly add in melted butter and mix well.
- Use spatula to fold in almond powder.
- Separate batter into two portions. In one portion of the batter add 1/2 tbsp each chocolate emulco, chocolate paste and mocca paste or coffee oil and mix well.
- Then spoon in plain and chocolate batter in cake pan alternately until you finish them.
- Bake at pre-heated oven at 165C for about 1 hour. (for this cake pan only)

Hi ann, looking fwd to try this gorgeous looking cake of yours. May I asked in step 1,do I dump everything in mixer bowl and whisk or do I do it in regular way ? Whisk eggs,sugar,sp till ribbon then fold in the flour. If I whisk eggs all together with flour,will it ever become thick and fluffy ? Sorry for the question,as I just learning to bake.Thank u.
Hi Grace, Yes, dump in everything including the flour and turn your mixing machine at high speed and beat till thick batter. Than add in the butter.
Suma: SP is sponge cake stabilizer. It helps the cake mixture more fluffy and thick and this makes the cake more spongy.

This cake is like a work of art. So interesting in the shape. I have that cake pan but have never even thought to make a two tone/flavored cake in it. You are so talented.
