Soft Carrot Cake
Carrots can be eaten in a variety of ways. The simplest way is raw as carrot are perfectly digestive without requiring cooking. Alternatively they may be chopped and boiled, fried or steamed, and cooked in soups and stews. Grated carrots are used in carrot cakes as well as carrot pudding.

- 1 tsp Baking soda
- 180g Brown sugar
- 2 Large eggs
- 160g Corn oil
- 250g Carrot – grated
- 80g Black currants or Raisins
- 100g Walnuts – chopped
- Line 15cm x 25cm pan at all sides.
- Combine sugar, eggs, oil, self raising flour and baking soda in mixing bowl. Beat at low speed till mixture is smooth and creamy.
- Use spatula to stir in grated carrot, black currants and walnuts.
- Pour mixture into prepared tin and bake at preheated oven 180 deg C for 1 hour or use a skewer inserted into the the center of the cake comes out clean.
Kitchen note: Some readers asked me the same question on self raising flour substitution. I have checked on www.pastrywiz.com ~ this is the replacement:
1 cup All-purpose flour (plain flour)
1 tsp Baking powder
1/4 tsp Salt
Ann, do I leave cake in tin till totally cooled down? Or leave cake in tin for 15mins then remove cake and baking paper and put on metal rack? Thanks
Yes Ai Li, you can leave the cake in tin for 10 mins, then remove it onto wire rack to cool.
Do I have to remove the baking paper when cooling on the metal rack? Thanks for your prompt reply. Blessed Christmas and New Year!
Thank you for your support and comment 🙂
thank you for your reply 🙂
Debbie: Someone also suggested to use cranberries, so I think must be good.
Velva: Yes, this is really a healthy cake.
Mamatkamal & Sook: Thank you for your sweet comments.
hvn't tried carrot cake before..will try one day..thx..
Hi Ai Li,
Just saw in the comment box below you’ve asked to make this recipe for double portion before. Actually you can make a triple portion in a 10 inch cake pan. If you want a higher cake, then use a 9 inch cake pan.
Hi Ann! Yes I know I asked you before but I actually did not do it then. Ok noted to feed 25 pax, I will triple it and bake in either a 10″ or 9″ square cake pan. Thanks!
Yes, can add anything you like 🙂

I have never made a carrot cake before and with raisins and walnuts its sure to be a winner :-)About your question regarding macarons, i would suggest you to stick to the recipe as its perfect, also with the ingredients mentioned, it doesnt come out too sweet so practically there is no need to reduce the sugar, hope this helps 🙂
Thank you, Donna 🙂

hello, may i know where did you get the grater that you use for grating the carrots? have been wanting to get a good one. can it be used for grating radish and turnips? thanks!
This is such a pretty cake and I love your addition of raisins!
This cake looks really good. Not to sweet, not to dry, just perfect. This would make a great breakfast or snack food.
I love simple and tasty cakes,
I'm gonna bookmark this one!
Just the normal method. If the cake is too soft, I'll put the cake in the fridge, let its harden a little and then cut the cake.
Look like I'm late, any balance for me? hehehe..
I love carrot cake too, but problem my kids doesn't appreciate it, so I have no chance to bake this at home, wait for you to belanja me..
I bought this grater long time ago at OG. (I really don't remember but I just saw the price tag still on the box) The outer box named Multi Wonder comes with different blades ~ chipping, slicing, shredding, garnishing, grating, paring and juicing. I usually used this grater for small amount but when making popiah, will use the the food processor.
I love a good carrot cake with lots of walnut in it, just like how you've made it! All I need is a cup of tea!
Wow, this is very nice, something I like. At first glance, I tot it is a fruit cake.
May I know if I want to replace the self-raising flour by plain flour, how much baking powder should I add in? Any idea?
HS: Haha…same here. Not sometime but always.
Let me know the outcome after you've tried it.
Petite: Thank you! Maybe you would like to try this 🙂
CBL: 谢燮哦!somebody also asked me the same question. I'm also not sure and I've checked at http://www.pastrywiz.com and I've typed on my post.
