Soft Carrot Cake
Carrots can be eaten in a variety of ways. The simplest way is raw as carrot are perfectly digestive without requiring cooking. Alternatively they may be chopped and boiled, fried or steamed, and cooked in soups and stews. Grated carrots are used in carrot cakes as well as carrot pudding.
Ingredients:
- 150g Self Raising flour
- 1 tsp Baking soda
- 180g Brown sugar
- 2 Large eggs
- 160g Corn oil
- 250g Carrot – grated
- 80g Black currants or Raisins
- 100g Walnuts – chopped
Method:
- Line 15cm x 25cm pan at all sides.
- Combine sugar, eggs, oil, self raising flour and baking soda in mixing bowl. Beat at low speed till mixture is smooth and creamy.
- Use spatula to stir in grated carrot, black currants and walnuts.
- Pour mixture into prepared tin and bake at preheated oven 180 deg C for 1 hour or use a skewer inserted into the the center of the cake comes out clean.
Kitchen note: Some readers asked me the same question on self raising flour substitution. I have checked on www.pastrywiz.com ~ this is the replacement:
1 cup All-purpose flour (plain flour)
1 tsp Baking powder
1/4 tsp Salt

Ann, do I leave cake in tin till totally cooled down? Or leave cake in tin for 15mins then remove cake and baking paper and put on metal rack? Thanks
Yes Ai Li, you can leave the cake in tin for 10 mins, then remove it onto wire rack to cool.

Just saw in the comment box below you’ve asked to make this recipe for double portion before. Actually you can make a triple portion in a 10 inch cake pan. If you want a higher cake, then use a 9 inch cake pan.

If you pre-heat the brown sugar then just proceed to do the cake…the aroma more good!
I have never made a carrot cake before and with raisins and walnuts its sure to be a winner :-)About your question regarding macarons, i would suggest you to stick to the recipe as its perfect, also with the ingredients mentioned, it doesnt come out too sweet so practically there is no need to reduce the sugar, hope this helps ๐

Carrot cake is one of the 1st cake i baked when i just started baking coz i just love.. carrot cake. The recipe i tried was without raisins but with pineapple and hint of cinnamon powder. Yours is a good variation.. worth trying ๐ Thanks.

Just the normal method. If the cake is too soft, I'll put the cake in the fridge, let its harden a little and then cut the cake.

(I really don't remember but I just saw the price tag still on the box) The outer box named Multi Wonder comes with different blades ~ chipping, slicing, shredding, garnishing, grating, paring and juicing. I usually used this grater for small amount but when making popiah, will use the the food processor.
