Mapo Tofu 麻婆豆腐
Mapo Tofu is a popular Chinese spicy dish from Szechuan, China.
Ingredients:
1 block Tofu – Cut to small cubes, dip in boiling water and drain
250g Minced pork
4-5 pcs Chinese mushrooms – soak till soft and dice
1-2 stalks Spring onion – cut finely
1 tsp Ginger – chopped or minced
1 tsp Garlic – chopped
3/4 – 1 tbsp Garlic Chilli Sauce (蒜蓉辣椒)
2-3 Fresh chilli – cut finely
Seasoning:
1 cup Chicken broth or water
2 tsp Light soya sauce
1/2 tsp Dark soya sauce
1/2 tsp Sesame oil
1 tsp Oyster sauce
1/4 tsp Sugar
1/4 tsp Chicken powder (no MSG added)
3 tsp Corn flour
Mix seasoning in one cup.
Method:
- Heat 2 tbsp oil in wok, fry garlic, ginger, chilli and garlic chilli sauce. Fry for a while and add in mushrooms.
- Then add the minced pork into it, add some pepper with 1 tbsp cooking wine, continue to fry minced pork till separated and cooked then add in tofu.
- Pour the mixed seasoning on to the minced pork and tofu, mix well~ let it boil and simmer at lower heat for about 5 mins.
- Dish up, sprinkle spring onion on it and serve.

I seldom cook hot dish at home because i only can eat those mild dish.. but i feel like trying this, the mapo tofu makes me drooling.. ^_^

Hi Anncoo, may I know when do you put in the tofu? Do you need to cook it again in the wok together with the minced meat? Or just pour the meat gravy on the tofu which was already boiled with hot water. Can't find the instruction at the method..

This is one of my favorite dishes. Two years ago I had this unbelievable craving for this and I couldn't even find the ingredients.
Fortunately they now have lots of Chinese groceries around here and I can get most ingredients I need for Chinese cooking.
One of my favourite way to cook tofu! Having all of them over a bowl of pasta is something I called Maponese Spaghetti!

I'm missing mapo tofu. It's rather disappointing that the Chinese supermarket here always run out of stock of tofu. I just have to be happy with homemade steamed egg tofu most of the time. I think I'm going to try it the mapo tofu way. Thanks for sharing

Petite: Last time I used hot bean paste 豆瓣辣椒酱 (Taiwan brand) but is not available now. I think this garlic chilli sauce is equally good. You can only get this Taiwan brand from First Emporium.
