Rum Cocktail
After busy making mooncakes for the Festival, I need something refreshing to relax myself. Let’s check what I have in my fridge…pineapple, red apples and some limes..just nice to make to 2 glasses of cocktail with rum added.
Prepare two cleaned tall glasses and rim the outside of the glasses with 1 quarter of lime.
Pour some Kosher salt on a plate.
Press the rim of a glass into the salt to rim the edge and put it in the fridge for later use.
250g Pineapple – cut into cubes
2 large Red apples – skinned and cut into cubes
150-200ml Cranberry juice
2-4 slices Lime
2 tbsp Dark Rum
Method:
- Puree pineapple cubes and strain.
- Blend red apples together with about 50ml cranberry juice, strain and mix with the balance 100ml cranberry juice.
- Take out the frosted glasses from fridge and fill 3-4 ice cubes into it.
- Pour half of the red apples juice into glasses.
- Add 2 tbsp dark rum into pineapple juice, stir well and pour equally to the glasses and top up with balance red apples juice.
- Add 1-2 slices of lime in it and serve.
ENJOY!
