Durian Ice Cream

It is durian season now and you can find many durian recipes appearing on many talented Malaysia and Singapore bloggers' blog for this month's theme of Aspiring Bakers. Recently I saw Joceline posted this yummilicious Durian Ice Cream and I quickly tried her recipe. Thanks Joceline for sharing this recipe, ... mmm... is really heavenly! The ice cream  is very fragrant with the sweet smell of Durian and is very creamy too.  hehee ...  I know it's very sinful but I almost wanted to finish the whole tub all by myself. I just couldn't help scooping the ice cream into my mouth :D If you're a Durian lover, you'll know what I mean :D

Durian Ice Cream

      Ingredients
    300g Durian flesh
    30g Brown sugar
    20g Coffee mate
    1 tbsp Fresh milk
160g Fresh topping cream from PH 植物性奶油

    Method:
  • Place durian flesh, brown sugar, coffee mate and fresh milk into the blender and blend them till very smooth. Add a little more milk if the durian mixture is still too thick.
  • Whisk fresh topping cream to stiff peak.
  • Fold fresh cream to durian mixture and mix well. Pour into container and freeze overnight until it's firm.
  • I sprinkled some sweet corn bits on the ice cream as decoration.
Kitchen note: The method of mixing the ice cream is the same as my Mango Yoghurt Ice Cream

This post is for Aspiring Bakers #33 (July 2013) - Tropical Spiky Month
hosted by Charmaine of MiMi Bakery House

Enjoy!

  29. Hi Ann, it's me again ;P
Just wonder whether it's a must to beat the whipping cream and what's the difference if we use the dairy whipping cream?

    thank you!

    ReplyDelete
  30. Hi Kah Chin,

You need to add more sugar to the dairy cream because it is unsweetened cream. After you beaten the whipping cream, the ice cream is more like a smooth mousse.

  31. Hi Ann,

Thanks for sharing. May I know yr fresh topping cream is it the same as whipping cream? Thanks!!

    1. Hi Jeanette, This fresh topping cream is a sweetened cream that use for frosting. Whipping cream is cooking cream.
