Bubble Rice Cookies 泡泡米曲奇
When I saw the Bubble Rice Cookies posted by Irene on her blog few months ago, I know I’m going to love it. These Bubble Rice Cookies were really addictive that I couldn’t stop myself from popping them into my mouth one after another and almost finished almost half of them gone while watching TV. You can easily make these at home without much effort ~ have a go at it! Your kids will definitely ask for more!

Ingredients
Instructions
- Cream butter and sugar till white and fluffy.
- Add egg and vanilla extract,mix well.
- Sift in flour, baking soda and salt and continue to mix well.
- Lastly pour in crispy rice and chocolate chips, fold well with a rubber spatula.
- Scoop chocolate mixture with a dessert spoon and drop on to a lined baking tray and bake at preheated oven at 150C for about 25 minutes or until golden crisp.
- Cool down cookies and store in an airtight container.

- 130克 无盐牛油
- 60克 砂糖
- 1个 全蛋 (约70克)
- 1茶匙 香草精
- 170克 普通面粉
- ½茶匙 苏打粉
- 食盐, 少许
- 80克 泡泡米
- 70克 巧克力粒
Instructions
- 把牛油和砂糖大至泛白,松发。
- 加入鸡蛋和香草精拌均匀。
- 再加入过筛的粉类,继续拌匀。
- 将泡泡米和巧克力粒加入后,稍微拌匀即可。
- 用汤匙舀面团粒粒,排放已铺上烘焙纸的烤盘里。以150C烘烤约20-25分钟或金黄色。
- 曲奇待凉后装即可。

Hi Ann thanks for yr recipe i have make this before, maybe last year or so &is so crispy and addictive. But this round my cookies were not successful, i used another baking shop butter not sure thatd the reason,
I double the recipe becz is so yummy.
i followed all the steps &quantity , except sugar i reduced by abt half .. my cookies is kinda dry, not very fragnant a big different frm previous taste in my memory.. .
I have hardly enough batter to stick all the rice n choco chips when shaping the last tray.. thinking is it the butter , perhaps i should stick to the brand i used last time or perhaps i cut too much sugar?
The smell and bite on the cookie also not frgnant i thot is must the butter despite its label premium butter . This is also my 1st try this butter
But now im not sure
Could you please help advise pls ? So sad my cookies dint turn well after hour prep
Hi Fiona, Is not the butter problem. You shouldn’t reduce the sugar. Sugar helps produce crunch in cookies because lower sugar cookies will be cakey and crumbly, not crisp.
Hi Ann, I’ve tried using RedMan brown crispy bubble rice same as your recommendation. But why after baking, most of it had some hard bites in it? Pls advise… my kids like the bubble rice but have hard bites bubble rice in it… where have I gone wrong?
Hi Grace, This sounds unusual. Can you show me a pic of your cookies? You can attach a pic on the small icon right down corner in this comment box. This crispy bubble rice can be mixed with oats and milk for morning breakfast. Have you tried to have a bite on the crispy bubble before preparing the ingredients?
Hi Ann,thanks for prompt reply. Had tried the bubble rice from the packet n overall tasted crispy. In the picture, those whole bubble rice tasted hard… can’t understand why some are hard bites bubble rice in it…. 🙁

Hi Grace, This is probably because your butter is not well beaten and not soft enough. Another reason is the butter mixture is not evenly coated with the bubble rice. You can try another batch again. If the bubble rice is still hard to bite, then the problem is on the bubble rice. You may buy another brand Krispy Rice to try from the supermarket.

Hi Marissa, I always bake the cookies one tray at a time. Putting two tray at one go, you need to move the trays up and down 2-3 times. This will probably need to bake the cookies for another few minutes longer.

Hi Ann, I used the same Rice bubbles bought from Phoon Huat but I felt hard bites in the cookies. I am thinking Kellogg krispies will be better for these cookies. I will try out again with Kellogg krispies n see if it will be better.Thanks just my feedback.

Hi ann,I tried the cookies, mine was crispy while hot. The next day were not as crispy in fact it tasted like (lao hong) though i keep the cookies in air tight container once cooled.
Hi, I kept mine for more than 3 days, still very crispy and crunchy. I think you need to bake the cookies a little longer to make them crisp and crunchy.

Hi Yvonne, 首先你的牛油要打的松发,加了鸡蛋后面粉要搅打均匀才下泡泡米。粉粉的状况也有可能饼干时间烤的还不够。

Hi, I'm planning to try this later. Just checking, is the baking soda same as the Royal Baking Powder I have? And I only have vanilla essence. Can it replace the vanilla extract?
Yes Sheryl, 1 tsp vanilla essence and 1/2 tsp baking powder.Happy Baking!

Hi Sheryl, Baking soda is bicarbonate soda not baking powder. You can also use baking powder and vanilla essence in this recipe.
It's baking in the oven now 🙂 Can't wait to try! The eggs and flour etc are all mixed using mixer right? The crispies are more than the dough. Hope the cookie won't fall apart later hehe

Hi Meng Geok, You can use self raising flour but I’m afraid that the cookies will be more fluffy than using plain flour after baked. Anyway you can try and feedback to me 🙂

Hi Lily,Sure you can add nuts but the cookies are not sweet without the choc chips. You can use raisins or dried cranberries if you don't like choc chips.
