Happy New Year everyone!! I hope you had an enjoyable holiday season. This is my first post for 2012 ~ Lemon Cheesecake. Lemon is the perfect flavour for a cheesecake. I’m sure no one can resist this extremely light dessert with a refreshing hint of lemon. Serve with a cup of mint tea. Perfect!

A yummy and tempting cheesecake for a good start of New Year..keep more to come in this New Year..
I already am craving for some summery ingredients, especially we have been getting very cold weather here.
I saw the episode of Tony Bourdain visiting Singapore. All the food looks so good. Definitely, want to visit there one day. I'm hoping to have a conference. Have a nice week.
Hope you had a good break. Nice cake and photos.

Pandanus leaves are very useful. You can use them in desserts or even snacks. Can't wait to see what you got. 🙂
@MelHi Mel, Thank you. Happy 2012 to you too!Snow powder usually can stay in and out of the fridge (it will not melt) as icing sugar can and very sweet too.

Hello Ann, Happy New Year! Looks like the Marina Bay Sands Hotel has become the new icon hotel in S'pore? I've just told my friend in Fb that it looks like an invasion of alien spaceship. Very special structure. Guess what, my camera is having a strike, don't know what I've touched but it doesn't focus properly now & I can't take photos like last time now, so feel a bit down. If I still can't work out the problem, will need to send it for repair & I think the bill won't be cheap, wooooo!
Gorgeous and delicious cheesecake you have made for the start of the year! May I know what is snow powder? Icing sugar?

I made this and it was yummy…however, the top shrunk to smaller than the width of the base. May I know why it happened and how can i rectify it? Thanks alot!
Hi Mickey, Just run a sharp knife around rim of the pan after the cake taken out of the oven, so that the cake will not get a waist line or shrunk too much.
ooh…thank you so much, Ann! hehe…i didn’t know i can take the cake out after baked…coz afraid it won’t be set tim…thank you, thank you! will try again!!
Mickey, Sorry, don’t take out the cake out of the pan immediately after baked because the cake is too soft to handle. Please refer to my cranberry cheesecake recipe.
My favourite! Looks so very mouthwatering. Wish I can have a slice right now. Yummmm….Kristy
