Lemon Cheesecake
Happy New Year everyone!! I hope you had an enjoyable holiday season. This is my first post for 2012 ~ Lemon Cheesecake. Lemon is the perfect flavour for a cheesecake. I’m sure no one can resist this extremely light dessert with a refreshing hint of lemon. Serve with a cup of mint tea. Perfect!

Serves: 5-7 serving
Ingredients
- Line and grease a 8" springform cake pan
- 100g Marie biscuits, crushed
- 80g Melted butter
- Combine crushed biscuit crumbs and melted butter together in a mixing bowl. Press the biscuit crumbs onto the base of the prepared pan and chill in the refrigerator for later use.
- 250g Cream Cheese
- 30g Sugar
- 3 Egg yolks
- 65g Whipping cream
- 1 Lemon zest
- ¾ tbsp Lemon juice
- ½ tsp Vanilla extract
- ½ tbsp Orange contreau
- 20g Butter, melted
- 2 tbsp Plain flour, sifted
- 3 Egg whites
- 35g Sugar
Instructions
- Cream the cheese and sugar together and slowly add in whipping cream, beat till creamy at medium speed.
- Scrape bowl and add egg yolks one at a time until all combined then add lemon zest, lemon juice,vanilla extract and orange contreau ~ beat to mix well.
- Scrape bowl, lower speed add in melted butter and plain flour, mix well and transfer cheese mixture to a large bowl.
- Whisk egg whites and sugar till peak form. Use a rubber spatula to fold egg whites to cheese mixture.
- Pour cheese mixture into prepared cake tin.
- Steam bake at 160C for about 1 hour. Cool to room temperature and chill cheesecake before serve.
- You may like to mix some cocoa powder and snow powder together and dust on cheesecake.

Happy 2012!! Very pro night shot, taken by ur new camera right? For the cake once done u remove from oven immediately or leave it to cool in oven with door ajar? If remove immediately leave it to cool in mould or unmould immediately also? I like the choc curl may I know where did I get it?Thanks for ur advice.

Pandanus leaves are very useful. You can use them in desserts or even snacks. Can't wait to see what you got. 🙂

Hello Ann, Happy New Year! Looks like the Marina Bay Sands Hotel has become the new icon hotel in S'pore? I've just told my friend in Fb that it looks like an invasion of alien spaceship. Very special structure. Guess what, my camera is having a strike, don't know what I've touched but it doesn't focus properly now & I can't take photos like last time now, so feel a bit down. If I still can't work out the problem, will need to send it for repair & I think the bill won't be cheap, wooooo!

wow – so pretty Ann. Love all amazing shots of Marina Bay too.I visited a large Chinese supermarket when I was in Scotland earlier in the week and have come back with a varied assortment of "stuff". I'll need to get some advice from you on what to do with it. Over the moon that I managed to get hold of some pandanus leaf which is something else I've never tried.Happy New Year and all the best for 2012

I made this and it was yummy…however, the top shrunk to smaller than the width of the base. May I know why it happened and how can i rectify it? Thanks alot!
Hi Mickey, Just run a sharp knife around rim of the pan after the cake taken out of the oven, so that the cake will not get a waist line or shrunk too much.

Mickey, Sorry, don’t take out the cake out of the pan immediately after baked because the cake is too soft to handle. Please refer to my cranberry cheesecake recipe.
