Lemon Yogurt Muffins
Ingredients: makes 12
160g Butter – softened
100g Sugar
2 Eggs
200ml Plain Yogurt
2 tsp Lemon juice
1/2 tsp Lemon oil
1 Lemon zest – grated from 1 lemon
200g Plain flour
1/2 tsp Baking powder
1/2 tsp Baking soda
1/4 tsp Salt
Methods:
- Preheat oven to 190C.
- Cream butter and sugar until light and fluffy. Add in eggs one at a time.
- Then stir in the plain yogurt, lemon juice, lemon zest and lemon oil.
- Combine the flour, baking powder, baking soda and salt together.
- Stir into the lemon mixture until just blended.
- Scoop batter into piping bag and pipe batter into paper cups up to 3/4 full.
- Bake for about 30-35 mins.
Enjoy!
I tried this recipe today.
The muffins rise when they were baking but once I removed them from the oven and placed them on the cooling rack, they sank and the top became flat.
I followed the recipe closely but I don't know why they sank.
Overall they taste yummy

Hi Anncoo,
I found this receipe and decided to try making it. Initally the muffins rise nicely while in the oven, but after it cool down it shrink, could you please advise where I go wrong? I follow the receipe to a T. Did I overdo in some steps? I'm very puzzle.

@AnonymousHi Unice, Sometimes ovens can vary with cooking times. The reason of your muffins shrink might due to they are not fully cooked. You may need to bake for another 5 mins extra and place your muffin tray in the middle of the oven for baking.Hope this helps 🙂

Hello Sarah's Mommy:Thank you for coming here. Don't worry about the Yogurt as the lemon flavour will overcome it. Adding yogurt will makes the muffin softer and moist. When making muffin must not over stir the flour. Grease the muffin pan with butter before adding batter into it.Worth trying this recipe as it is quick and easy.

Hi, first time here. I love most of your recipes, they look very nice and I am sure they taste good too.

By the way, may I know will the muffin has very strong yogurt taste? Actually I am not a big fan of yogurt but I like sour food.

Last time I used ice cream scoop but now I think use piping bag faster and not so messy. Can buy the disposal type from Phoon Huat. OR maybe you can use the ordinary plastic bag (the one from supermarket) and cut a hole at one angle.

Hi Yummy Koh: Thank you! Of course you can omit the lemon oil but when lemon oil added into the muffins you can really smell the fragrant flavour of lemon.
If you can get lemon yogurt is so much better than plain yogurt.
