Fried Udon 炒乌冬面

Ingredients:
3 pkts Udon (600g) ~ click here for more Udon recipe
150g Prawns – shelled and clean
2 stalks Spring onion -cut about 2″ length
1 Onion – shredded
Some shredded carrot
4 slices Ginger
2 tsp Garlic – chopped
Marinate ingredients for lean pork – for at least 30 mins
1/2 tsp Sugar
1 tsp Dark soy sauce
3/4 tsp Corn flour
1 tbsp Corn oil
Seasoning:
200ml Chicken broth + 50ml water
1 tsp Dark soy sauce
1 tbsp Light soy sauce
1 tbsp Oyster sauce
1 tsp Chicken powder (no MSG added)
1/2 tsp Sugar
1 tsp Sesame oil
Mix all the seasoning together with the chicken broth.
Methods:
- Heat enough oil in wok. Fry 1 tsp of chopped garlic and 2 slices ginger for a while. Add in the marinated pork with 1 tbsp of cooking wine. Stir fry till cooked and dish up, set aside.
- Add 2 tbsp of oil, fry the balance chopped ginger, garlic, shredded onion and shredded carrot till fragrant.
- Pour the chicken broth with seasoning in it follow by the udon and prawn.
- Stir fry well and cover with lid, lower fire simmer until sauce dries up a little.
- Then add in the lean pork and stir well, sprinkle spring onion on it.
Kitchen note: Leave Udon in room temperature. Put Udon under running water (to separate the Udon) and drain before cook.

Usually i like my udon in black pepper style, but your one look not bad wor..well done..
