Lychee Agar Agar Mooncake
Filling Ingredients:
1 can Lychee (drain and keep syrup)
1 Pkt Nata De Coco (drain)
- Blend the above coarsely and keep for later use.
400ml Syrup from lychee
3 tsp Agar agar powder
45g Sugar
3 tsp Gelatine powder
100ml Fresh milk (to be added last)
- Boil all the above ingredients and keep stirring it for about 5 mins at medium heat.
- Leave heat and add in milk, stir well and pour in the grinded Lychee and Nata De Coco, add a little rose pink colour, mix well and pour into a 9″ cake tray to set.
- After the filling is set, cut to required size. Use a small knife roughly scratch the surface lightly.
Skin Ingredients
750ml Lychee Drink
20g Agar agar powder (2 packets) + 1 tsp gelatine powder
210g Sugar
750ml Fresh milk (to be added last)
- Boil all the above ingredients and keep stirring it for about 5 mins at medium heat.
- Leave heat and add in milk, stir well. (Optional ~ add 1/2 tsp lychee essence)
- Pour some white liquid into moulds.
- Place one piece of filling in each mould, then fill up the moulds.
- Put the moulds in the fridge to set.

Hi Ann, with 1 portion I can only make 3 trays i.e 12pcs and 16pcs small pieces. 1 question : how to prevent bubbles in the tray? Thanks!
Hi Ai Li, you can use a teaspoon to scoop away the bubbles.

Anja: Thank you :)Cilia, One of my good friend share this recipe with me. I had made some adjustment in the recipe. You can get the moulds from sunlik but only oval shape maybe you can ask whether they still keep stock for the square one.

Hi Chris: I used 6 trays. If use all full cream milk you can't get the smell of the lychee.

es, this is what I want…let it sink a little to get the pinkish colour from the outside.
After you fill the white liquid into mould (I mean one tray at a time)and come back to add in the filling, the white liquid will set a little. Use a skewer to push the filling lightly to the centre and fill up the mould.

Anncoo, I wanna make this soon but can you please elaborate I'm a lil nob! You say 'place some white liquid into each moulds, place one filling in each mould, then fill up the moulds'. When you put the first white liquid, don't you have to wait for it to set first before putting in the filling? Just wondering whether it will sink to the bottom then won't look pretty. Thanks!!!

Approximately 1 tablespoon of gelatin powder to 3 gelatin leaves.
Is better to test it out first because I only used gelatin leaf in cheesecake not jelly.
