Mini Mixed Fruit Cake
Here is the recipe adapted from 珊言慧语 & Joceline
Ingredients ~ makes 8
125g Melted Butter
40g Sugar
3 Large eggs, lightly beaten
120g Self raising flour
100g Natural yoghurt
60g Dried mixed fruit + 20g dried cranberries + 1 tbsp rum (mix together)
1 tbsp Rum
1 tsp Vanilla extra
- Mix the mixed fruit and dried cranberries with 1 tbsp rum and set aside for 30 minutes or longer.
- In a large bowl, mix well melted butter and sugar together then add beaten eggs, natural yoghurt, rum and vanilla extract ~ mix well with a hand whisk.
- Sieve in self raising flour, mix well and sprinkle some flour onto dried mixed fruit and fold in with a rubber spatula (do not over mix).
- Spoon mixture to muffin cups or liners to 3/4 full and sprinkle extra mixed fruit on top.
- Bake at preheated oven at 180C for 20-25 mins or skewer inserted into the centre comes out clean.

Sure you can omit the rum and best consumed within 2-3 days.

Hi AnnI just baked these mini cakes. Mine were bubbling with melted butter when baking in the oven. Have you come across such? I wonder why. Mine turned out barely brown quite like yellowish. I did bake in center rack. These cakes are not sweet which is my preference. Thanks for sharing.Lynn
Hi Lynn, I think the batter was over mixed that causes the butter bubbling. You can switch your oven to on grill after the cakes were baked to brown the top for 30 seconds to 1 min next time.
Hi I Med theses muffins- great textures but pretty much lack of Flavour and sweetness as fruit cake- I used whisky.
Perhaps sugar q uantity needs to increase?

Is alright that melted butter was bubbling during baking because there was also yoghurt into it. Sometime it might due the eggs we are using, the yolks are yellower.

Your muffin reminds me of my childhood. I remember I used to eat muffins with dried fruit, just like them. The green square dried fruit (not sure what it is) looks so familiar! Now living in the US I don't think I've seen them. Do they exist only in Asia? I'm not a baker so I could be wrong…but these muffins brought my nostalgic memories. 🙂

Hi,I have tried baking these mini mixed fruits cake but they did not rise like yours, what could be the reason? Also, I have baked at 180C for 20 mins but the top not brown yet, so I continued baking for another 5mins when it came out with nice top but the base turned very brown (over baked).Four your advise pls.
Oops …. did you place the tray of cupcakes in the center rack of the oven? If you place them at the lower rack then the bottom of the cakes will definitely over baked.Thank you for trying my recipe btw I'm closing my blog for a few days for some makeover.

baking them in small is also a very good idea, dont even have to bother to find a knife to cut it! LOL!
