Tagliatelle in Green Pesto Sauce
Pine nuts are high in monounsaturated fats, the same “heart healthy” fats that make nuts and olive oil so beneficial. These fats have not only been shown to reduce blood cholesterol levels but also helps to protect arteries from damage which can lead to heart attack. refer Health Mad
Today’s recipe is something that you can make quickly and easily using a blender to combine pine nuts, fresh sweet basil leaves and olive oil together as pesto sauce.
Here is the recipe
Ingredients (Serves 2-3)
300g Tagliatelle (Italian flat noodle) or Spaghetti
100g grated Parmesan cheese
Freshly ground black pepper
Pesto Sauce
3/4 cup Fresh sweet basil leaves
4 Cloves Garlic – peeled
3 tbsp Pine nuts (lightly toast pine nuts for about 3 mins)
1 tsp Salt
100ml Extra virgin olive oil
100m Water
Method:
- Place Pesto Sauce ingredients in a blender and process till smooth. Remove to a bowl, stir in parmesan cheese, set aside. (if pesto sauce is too thick, add a little more water into it)
- Cook tagliatelle in a large pot of boiling salted water for 15-20 mins.
- Drain the tagliatelle and toss with the pesto sauce, ground black pepper.
- Garnish with some cherry tomatoes and chopped red chillies if you prefer.
Enjoy a great change from red sauce !

I love pesto and it is a nice change from tomato sauce. It's a very refreshing dish to remind you of a little bit of summer during the colder months. Sometimes I make mine with walnuts or almonds for a change a pace. 🙂
