Udon, Mushroom and French Beans
After posted so many cakes and desserts, I think it’s time to post a healthy meal. I’m sure many of you like me love udon either stir fry or soup. So today I’m sharing with you my concoction of this healthy udon tossed with shitake mushrooms and French beans and garnished with a simple dressing. This one dish or meatless meal is so wonderfully delicious that I really don’t mind having it thrice a week.
According to Organic Facts and Healthism, mushrooms contain more than twice the amount of protein as other vegetables and the health benefits include relief from cholesterol levels and many cancer disease. It also helps in weight loss, increasing immunity. French beans are sweet, tender and wonderfully crispy. French beans are also beneficial for diabetic people as they help in preventing the sugar levels from rising up immediately after having a meal.
Udon, Mushroom and French Beans

Serves: 3 serving
Ingredients
- 600g Udon
- 250g Fresh Shitake mushrooms
- a bunch of French beans
- 1 tbsp Garlic, chopped
Dressing - 200ml Water
- 3 tbsp Kikkomann soya sauce
- 1½ tbsp Mirin
- 2 tsp Sesame oil
- 1 tsp Sugar
- 2 tsp Mustard powder (optional)
- 1 tbsp Corn flour
- some cut green and red chillies for garnishing
Instructions
- Combine all the dressing ingredients together in a small pot and stir to boil with a whisk. Lower heat and simmer for 30 seconds or till sauce thickened and set aside.
- Gently wipe the fresh shitake mushroom with a damp cloth or a paper towel and remove stem and slice mushrooms.
- Heat non-stick pan at medium heat with a little oil and saute garlic for a while, add mushrooms into it and stir fry for about 2 minutes. Then add ½ tbsp of oyster sauce and 3 tbsp of water into the mushrooms and saute for another minute with a dash of pepper. Dish up and set aside.
- Rinse French beans and blanch them in a pot of boiling water with a pinch of salt for 2 to 3 minutes. Then soak the beans in cold water for 30 seconds and strain, cut them diagonally, set aside.
- Blanch the udon in the same pot of boiling water for 2-3 minutes until udon separated and cooked. (while blanching the udon, warm up the sauce at low heat).
- Divide udon equally in 3 serving bowls or plates, top with French beans and mushrooms. Gently drizzle with 4-5 tablespoons of the dressing over it with a dash of black or white pepper when serve. (do not add too much of the dressing as it is quite salty, just add to taste). Garnish with some red and green chillies on top.
- Toss the udon well before consuming.

Hey Ann, today I cooked this. I don't like udon so I replaced udon with china's Ramen (龙须面) and I add one more ingredient olive vege and it taste excellent so yummy. I finished in less than 5 mins 😀
Hi Ann,This udon looks good! Do you think I can prepare this in the morning and bring it to office to have it as lunch? Will the udon become soggy?
Hi Jean, yes you can keep the sauce for a day or two but not for long. Heat up the sauce with little water before use.
Hi Ann, I did it for lunch today, thou replacing shitake with beech mushrooms and french beans with broccoli cos happened to have these 2 ingredients in the fridge. Wonder if I can prepare the sauce since its for 3 servings and keep it in the fridge to be used over a few days?

Hi Jean, sorry for overlooking on your comment. You can prepare the sauce first and microwave later in the office. The udon can be soaked in hot water and drain then mix with the sauce.
