Chinese New Year is only 2 days away. As always I baked pineapple tarts and cornflake cookies which are the ‘must have’ each year. I had tried and shared a few new recipes of Chinese New Year Goodies on my blog this year and these easy Walnut coffee Cookies are my last batch of bakes for the holidays. I used all the leftover chocolate chips and walnuts in my pantry to make these easy and crunchy cookies. The combination of chocolate chips, walnuts and some coffee paste developed a perfect flavour and wonderfully sweet fragrance and made me have a few in a go with a cup of hot coffee.

Walnut Coffee Cookies
The combination of chocolate chips, walnuts and some coffee paste developed a perfect flavour and wonderfully sweet fragrance and made me have a few in a go with a cup of hot coffee
Ingredients
- 125 g butter - soft to touch
- 80 g brown sugar
- 1 egg, lightly beaten - medium size, about 60g with shell
- 200 g plain flour
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract
- 1/2 tsp coffee paste
- 80 g chocolate chips
- 70 g walnuts - chopped
Instructions
- Preheat oven to 180 degrees C. Sieve flour and baking powder into a bowl, mix well and set aside.
- Cream butter and brown sugar till light and fluffy. Gradually add in beaten egg until well combined followed by vanilla extract and coffee paste, mix well again.
- Pour in flour mixture and fold well with a rubber spatula. Lastly add in chocolate chips and chopped walnuts, fold well.
- Spoon the dough down onto the lined baking sheet and bake in preheated oven for about 13-15 minutes. Cool down cookies then keep them in an airtight container.

把剩下的巧克力粒和核桃做了这款带有咖啡香味脆脆的曲奇就收工了。
材料:
125克 牛油 (稍微软)
80克 黄糖
1个 全蛋,打撒
200克 中筋面粉
1/2茶匙 泡打粉
1//2茶匙 香草香精
1茶匙 咖啡香精
80克 巧克力粒
75克 核桃,剁碎
做法:
- 预热烤箱摄氏180度。 将粉类一起过筛到碗中,混合均匀备用。
- 把牛油和黄糖打发。慢慢倒入蛋液拌匀,燃油加入香精。
- 倒入过筛好的粉类,用刮刀翻拌均匀。最后放入巧克力里和核桃碎,再拌匀即可。
- 用小茶匙取出适量的小面团,直接倒在铺上烘焙纸的烤盘上。放进预热烤箱烤约13-15分钟左右。待饼干完全待凉后装入密封罐。
Your recipe didn’t mention about Baking Soda, however your instructions said sift baking powder and baking soda and set aside. So, should we add in baking soda?

Can I use cranberry instead of chocolate chips? For plain flour can use self-raising flour instead?

Hi Mary, Yes you can but why not try the recipes with cranberries, like cranberry cookies, cranberry biscuits or almond cranberry cookies. All the recipes can be found here

Hi Mary, You can add about 1 tbsp coffee powder but the taste is not as fragrant as coffee paste.

i would to like to ask, why my biscuit become soft? I did reduce the portion of the butter n brown sugar. will this is the root cause the biscuits be soft?

Hi Yvonne, Wonder why you want to reduce the butter? The butter is soft to touch and not totally soft. This recipe is not crispy cookies but you can try to bake the cookies a little longer.

Due to health issues I can’t eat too oily. Yes. The butter is soft to touch. I baked for 20 min with 180 degree. The cookies crakes ( I assume is over cooked).

Hi Yvonne, this is recipe is crunchy type with the chocolate chips and walnuts. You may try the cornflakes cookies for crispy texture.
Kids will definitely love these wholesome cookies.
