Mississippi Mud Cake ~ Anncoo Journal Turns Two Today!!
I am submitting this post to Aspiring Bakers #4: Love In The Air (Feb 2011) hosted by Cuisine Paradise.
- Here is the recipe
1/2 tbsp Baking soda
- In a pot melt butter, sugar, bitter chocolate, sugar, coffee liquid together. Still the mixture very well till sugar dissolved. Do not boil. Then add kahlua liqueur and vanilla extract.
- In a large bowl, sift self raising flour, baking soda and cocoa powder together, then pour chocolate mixture into flour. Use hand whisk to mix well till mixture becomes thick and lastly add in beaten eggs and mix till smooth batter.
- Pour batter in a 8 inch heart shaped (lined) pan or 8 inch round cake tin or a 7 inch round cake tin if you prefer a taller cake.
- Bake at preheated oven 170C for 30-35mins.
- Leave cake in mold till cool after baked.
Mix warm melted butter in chocolate cream with a hand whisk till smooth, add Kahlua liqueur ~mix well.
- Slice cake into two horizontally and sandwich the cake with chocolate cream. Then coat the whole cake with chocolate cream with a palette knife and decorate as desire.
- Serve the cake immediately or chill the cake before serve.
- Keep the remaining chocolate cream in fridge for other uses.
Hi Ann, I have been asked to bake a birthday cake for my boss and colleagues for the office celebration so I would like to consider this recipe. There are about 25-30 people in the office. So do I double, triple or……this recipe? Also, I would to bake in a square tin so what should be the size? Or do you have other of your birthday cake recipes that you recommend? Thanks!
Hi Ai Li, This cake is quite dense if you over baked it. So better don't consider about it.

Liz, my cake is a bit crumbly not too dry but you can store the cake in the fridge for next day, it tastes better after you thaw the cake for a while.
Someone like Janz (her comment is on top) told me her cake is soft and I think maybe the oven varies.

Hey I'm no way as compare to your baking skills.I really admire your bakes and wish I'm as good as u are Ann….."salute 2U".I just love to try out new recipes.Nope, the sinkage puts me off and I did not bother anymore to coat it with the choc cream.Anyway,I'll give another try n see the outcome.

Janz, clever you that your cake is soft and moist plus no cracks at all!
I also don't understand why?? Did you coat the cake with chocolate cream? Even without the cream, the cake can goes with vanilla ice cream also very good!

No wor,the center was fully baked.I even baked it at an additional 5 mins after testing it with a skewer for doneness, just that it has a slight dent/sinkage in the center. The cake is still very soft and slightly moist in texture even today….sigh…dunno wot went wrong…hehehe!!!

Janz Pg, Sorry to say that your cake is not cooked ๐ I'm sure after you cut the cake, the center is still a bit wet. You might need to bake another extra few minutes when you bake this cake again.

Thanks for your prompt reply regarding the soft choc cream. I tried baking your recipe this afternoon using a 7" square pan. The cake rose nicely and evenly without any cracks during baking but after leaving it to cool on the wire rack,the center sank. Do you have any idea why this happened. The texture of the cake was soft though. Pls advice.
