Yes Corinna, just spread with whipped fresh cream on the frozen cake. Measure about 300-350g fresh cream and whip to peak form. Keep the remaining whipped fresh cream in the freezer for future use.
Just a gentle reminder, the portion of the durian filling is slightly too much for the cake, so keep the remaining durian ice cream in a container.
So just need to whip the fresh cream + whipping cream and spread on the frozen cake? Thanks for sharing. Have lots to learn from you. You are a great baker 🙂

That is fresh topping cream not mousse. You have to freeze your ice cream for several hours before spreading the whipped cream on it and put the cake back to the freezer.
How did you do the mousse on the cake?

Corinna, this recipe is the same as the durian ice cream roll. Just use two slices of 9 inch sponge and sandwich together with the durian ice cream.
Remember to use a cake ring.
