Chocolate Marbled Cookies
I have seen many bloggers making this light and crumbly, melt in your mouth recipe ~ German Butter Cookies adapted from Min’s Blog. I’ve changed the recipe a little by adding some Valrhona cocoa powder to make it marbled for extra chocolately and it’s definitely worthwhile to play around with them a little bit 🙂
Here is the recipe
125g Butter
40g Icing sugar (sifted)
125g Potato starch or corn starch
80g Plain flour (sifted twice)
Beat butter and icing sugar till fluffy and lighter in color.
Sift in potato starch and flour, mix to form a soft plain dough and set aside.

20g Valrhona cocoa powder (sifted twice)
60g Plain flour (sifted twice)
Beat butter and icing sugar till fluffy and lighter in color.
Sift in potato starch, Valrohona cocoa powder and plain flour, mix to form a soft chocolate dough.
Divide plain and chocolate dough into 4 portions.
Roll plain and chocolate dough separately into long strips. Using 1 tsp measuring spoon of plain and chocolate dough, wrap them around each other with your hand and place on a lined baking tray and gently press dough with your finger.
Bake at preheated oven at 170C for 13-15 mins depending on the size of your cookies.
Leave to cool completely and store in an airtight container.
This melts in your mouth cookie is perfect with a cup of fresh brewed coffee 🙂

Mine looked really pretty, but they don't taste great. They're very starchy. I used corn starch, but next time I'll replace some of the starch with flour.
They're really fun to make, though! It takes hardly any effort to get them looking just as pretty as in the photos.
Hi Jen, There might be some differences the corn starch that you used. Is really ok to use more flour than corn starch if you prefer.

And pretty much, the recipes are all the same but you are so smart to play around with the cocoa powder and yr marbling effect is so pretty! Love it! Hv bookmarked this recipe for my future baking. Hi Ann, just want to check for the butter do we use salted or unsalted butter cos I find it slightly salty.

I prefer to use salted butter and of course you can use unsalted butter if you prefer.

I think if you want the melt in your cookies texture, it's better to use icing sugar for quick mixing. Caster sugar will takes a little longer to melt.
hi, can substitue icing sugar to castor sugar?

You can use ordinary cocoa powder too but of course not as flavorful compare to valrhona. I bought the valrohona cocoa powder from Sunlik at 8.50 for 250g.
