Dim Sum – Steamed Spare Ribs 豉汁蒸排骨
Hello! After more than 4 weeks of rest, I would like to share with you this savoury dish Dim Sum – Steamed Spare Ribs ( or pork ribs) that I’m sure many of you love to order in the dim sum restaurant. Steamed Spare Ribs is also a must order on my list besides Har Gow and Siu Mai. I like to cook this tender Steamed Spare Ribs quite often at home as my family really enjoyed this dish very much. It is very easy to prepare and the saltiness of this Steamed Spare Ribs is so delicious that we can always eat with extra rice.
Dim Sum - Steamed Spare Ribs 豉汁蒸排骨

Serves: 5-6 servings
Ingredients
- 450-500g spare ribs (with some fats), cut into bite sizes
- 2 Red chillies, cut to small pieces
- 2 tbsp Garlic, chopped
- 1 tbsp Ginger, minced
- 1 tbsp Spring onion, chopped
Seasoning - 1 tbsp Fermented black bean, rinsed and roughly chopped
- 1 tbsp Fermented soya bean paste
- 1 tbsp Light soya sauce
- 1 tbsp Oyster sauce
- 1 tbsp Chinese cooking wine
- 1 tbsp Corn flour
- 1 tsp Sugar
- 1 tsp Sesame oil
- dash of pepper
- 2 tbsp Water
Instructions
- Combine all ingredients and seasoning together and marinate for 2 hours or more in the fridge.
- Then place seasoned spare ribs in a shallow dish plate and cover with aluminium foil, to prevent water drips.
- Steam at high heat for 20 minutes or until the spare ribs are well cooked (remember to add more hot water when the steaming water is drying out).
- Garnish with extra chopped spring onion and cut chillies on top before serve.

材料:
- 400-450克 软排骨,斩块
- 2条 红辣椒,切细
- 2大匙 蒜蓉
- 1大匙 姜溶
- 1大匙 葱粒
调味料
- 1大匙 豆豉,冲净,剁碎
- 1大匙 豆酱
- 1大匙 生抽
- 1大匙 蚝油
- 1大匙 绍兴酒
- 1大匙 栗粉
- 1/2小匙 糖
- 1小匙 麻油
- 少许胡椒粉
- 2大匙 清水
做法:
- 酱全部材料和调味料拌匀,腌2小时或以上。
- 蒸锅的水煮滚后,放排骨隔水,盖上铝箔纸以防水汽浸入冲排骨谈排骨味道。
- 蒸约20分钟或至排骨熟透。
- 再撒些辣椒粒和葱花即可上桌。

Welcome back Ann! My boy will always order this dish whenever we have dim sum. I too make this at home but I'd rather cook it then steam. Simple reason is that cooking it longer will make the meat more tender…. to please the Oldies who do not have strong teeth! Ha, ha!

Gorgeous-looking dish, Ann! I love pork ribs too & it's one of those must order dish, but I'm real fussy. Some of those serve in restaurants add too much flour resulting in too smooth a texture. Love to try yours some day! Glad to see u in good shape!

Hi Leanne, This is a Chinese type of fermented soy bean paste. Of course you can use miso to replace it.
