Earl Grey Tea Cake 伯爵茶蛋糕
Hi, today’s post is Earl Grey Tea’s recipe again. I love Earl Grey Tea, love how it smells and so perfect to use in bakes. Remember I baked one chiffon cake and cookies with Earl Grey Tea before? And this time I baked this Earl Grey Tea Cake for submitting to the Aspiring Bakers April event. Sorry AB, I’ve not joined you for a long time. This tea cake is so fragrant with Earl Grey Tea and lemon zest. It’s also complemented by the generous brushing of the lemon syrup on the cake. Simply no fuss free tea cake for an afternoon tea.

Ingredients
- 150g Plain flour
- ⅛tsp Baking powder
- 150g Butter, softened
- 130g Confectioner sugar (icing sugar)
- ½ tbsp Glucose/golden syrup or honey
- 3 Eggs (70g each)
- ⅛ tsp Salt
- 5g Earl grey tea dust from 2 tea bags
- 15g Ground almond
- 1 tbsp Fresh whole milk
- Lemon zest from 1 large lemon
To make lemon syrup for brushing - 50g sugar + 100g very hot water, stir well and add 2 tbsp lemon juice in it, mix well, set aside.
Instructions
- Preheat oven to 170C. Line a 19 x 9 x 8cm loaf tin with parchment paper all sides up.
- Sift flour and baking together twice, set aside.
- Beat butter, icing sugar and glucose together until light and very fluffy. Gradually add eggs and beat well, then add salt, tea dust, ground almonds, lemon zest and milk. Mix well.
- Add flour mixture and fold through completely using a spatula. Surface of batter should be glossy and smooth.
- Pour batter into prepared loaf tin and bake for 50 minutes or skewer inserted into the center of the cake comes out clean. Note that the baking time may vary according to your oven.
- When the cake is done, unmould cake and peel away parchment paper. Place cake on a wire rack and brush with lemon syrup while cake is still warm.
- Leave to cool completely before serving. If storing, wrap with cling wrap.

Notes
My cake is a little flat as I've used a slightly bigger loaf tin and has shortened the baking time to 35 minutes.

Lena, have a try. Can use any type of English tea. You'll find the cake very fragrant and delicious.

Yes, this cake is more like a pound cake, cracks on the top. Mine was quite flat 🙁
Ann, may I ask why specifically glucose is added to this cake? Is it ok if I substitute it with honey? If yes, is it still 1/2tbsp? I have planned to bake this tomorrow as a little surprise birthday cake for my husband. Thanks!
Ann, you meant the 8"x4.5" non stick loaf pan right? The one which you used for Almond Coffee cake? Another question, do I have to use up all the lemon syrup? I just keep on brushing and brushing the top of the cake till the syrup is used up? Thanks!
Hi Ai Li, sorry that I'm able to reply your comment soon thatI was quite busy the last few days.
Yes you can use the 8 x 4.5" non stick loaf pan but must remember to line the pan.
Not necessary to use up the lemon syrup if you're not the sweet tooth type.
Yes use honey or golden syrup if you've any of these at home. This will makes the cake soft.

Ann, I baked this today. Not sure if it is a success….the top peaked and cracked. Is this normal since I baked it in a loaf pan? Will eat it tomorrow to find out how it will taste. Thanks!
Ai Li, Thanks! Next time I must try Lady Grey. I think you can use the small baking pan you bought from Daiso? You can use that too!

Hi Ren,
You can replace with corn syrup if you have it at home or just increase the icing sugar to 150g without the glucose.

This looks gorgeous, Ann. I made Earl Grey Cupcakes long ago, and this cake reminds me that I love that flavor in cakes. I really like that you can see the actual tea in the slices—I can just taste (and smell) it now!

Hi ann! I tried this today and the batter only fill up half of the tin… Mayb my tin is big… Sorry I did not measure my tin…Can I double the proportion next time round… How long should I bake the next time round? Still at 50mins?
Hi, How big is your cake pan? Sure you can double the recipe. The baking time is about 10 minutes extra but you must check the cake whether it is fully baked by inserting a skewer into it comes out clean.

Yes, you have to double all the ingredients for double portion. The will cake cracks a little after baked.

Yes Shasha, Same temperature but bake the cake for another 10 mins or longer. Please test it with a skewer to make sure the cake is fully baked.
Hi Ann, Love the presentation of your Earl Grey Tea cake. Was wondering if i omit the lemon syrup would it affect the flavour of the cake or is it just to make it sweeter or softer texture? Tq.
Hi Zoe, Thank you! By adding lemon syrup will makes the cake critrusy and moist. You can reduce the icing sugar a little if you’re afraid the cake is too sweet.

Hi, This cake is not dense type because with honey added. You might have over mixed the batter or lower the temperature a little when you bake this cake again.
can i make this in a bundt pan?
Hi Emily,Normal bundt pan is 4-5 eggs but you have to check the size of your own pan on how many eggs did you used in your previous bake.

No I didn't. Only brush more on the cake.

Hi Kim, Is the almond meal. You can change the 15g almond meal to plain flour if you don’t like the ‘pastey’ taste. No problem to use caster sugar instead.
