Ham and Cheese Muffins 火腿芝士玛芬
These savoury Ham and cheese muffins are easy to make for a quick breakfast or as a snack for kids. Should you have some leftover, you can reheat them in a toaster oven for a few minutes the next day. Just a little note, if you want a more moist and savoury muffin, I suggest that you add some chopped tomatoes into the batter.
Muffins are one of the easiest bakes as you just need a spatula to combine the mixtures in a large bowl. Take note not to overmix the flour as this will result in a dry and tough muffin.
Ham and Cheese Muffins
Ingredients
- 100 g shaved ham
- 60 g shredded mozzarella cheese
- 100 g self-raising flour
- 1 tbsp caster sugar
- 80 g fresh milk
- 2 tbsp corn oil - or olive oil
- 1 large egg - lightly beaten
- dash of pepper
- 6 cherry tomatoes - halved
Instructions
- Sift self-raising flour in a large bowl, set aside.
- Combine egg, ham, mozzarella cheese, corn oil, pepper and sugar (with some chopped tomatoes) together in a separate bowl. Pour the ham and cheese mixture into the flour and fold lightly with a rubber spatula until combined.
- Scoop mixture into 6-hole muffin pan lined with cupcake liners, place halved tomato on top and bake in preheated oven at 200 deg C for about 20 mins or until golden.

材料:
- 100克 火腿,切碎
- 60克 莫扎里拉奶酪丝
- 100克 自发面粉
- 1汤匙 细砂糖
- 80克 牛奶
- 2汤匙 玉米油或橄榄油
- 1个 大全蛋,打撒
- 胡椒粉适量
- 6粒 樱桃小番茄,切半
做法:
- 自发面粉筛入大碗中,备用。
- 将鸡蛋,火腿,莫扎里拉奶酪丝,玉米油,胡椒粉和砂糖(加一点切粒小的番茄会使玛芬更加湿润)放入另一个碗中混合均匀。然后倒入面粉里,用橡皮刮刀翻拌均匀即可。
- 然后平均分配混合物到六个纸杯里放上小番茄。送人预热烤箱摄氏200度烤约20分钟或至金黄色即可。
- 注意:不要过度的搅拌, 面糊会起筋使烤出来的体质会很扎实
