Lemon Delicious (MasterChef)
Lemon Delicious
- Ingredients:
40g (1/4 cup) Self raising flour
65g (1/3 cup) Caster sugar (reduced to 50g)
40g Butter, melted
Zest of 2 lemon (I only used one large lemon)
40ml Lemon juice
2 Egg yolks, lightly beaten
100ml (3/4 cup) Fresh milk
2 Egg whites
Pure cream, whipped to soft peaks, to serve (I omitted this)
Method:
- Preheat oven to 180C. Lightly grease 4 ramekins (you can use a smaller ramekins)
- Place flour, sugar and lemon zest in a large mixing bowl and whisk to combine. Make a well in the centre and pour in lemon juice and melted butter. Stir to combine, add egg yolks and mix well. Stir in milk.
- In a separate clean small bowl of an electric mixer (I used my Kitchen Aid mixer), whisk egg whites until stiff. Fold egg whites into batter and divide mixture evenly between ramekins. Place ramekins in a large roasting dish (I used a square cake pan), filled with cold water to come halfway up the sides of the ramekins and bake for 30-35 minutes until golden.
- Good to serve warm.

Hi Ann, I baked these tonite!!!! They were really soft like creme brulee. The cake was fulled baked but then when I got to the bottom of the ramekin, there was still a lot of batter. I baked for 35mins and the top was already brown. So I covered with foil and baked it longer. Why is it so? Other than this issue, it is a very very soft and moist cake. Thanks!
Hi Ai Li, did you add more water to it when baking half way? Because water reduces when baking.
Hi Ann, I didn't touch them once I put them into the oven. Also, I got 6 ramekins instead of 4. They are quite sour too. Don't know what happen?
As oven varies, you need to monitor your oven. Next time add lemon juice to your taste. For this recipe I also reduced the sugar as some recipes added a lot of sugar in it.
Hi Ann, will use the balloon whisk. This is the 1st time in my life beating egg whites. I intend to surprise my family with this dessert tonite but I got to fetch my daughter back from school and bathe her when shes back so thought preparing it before fetching her then bake when I am bathing her. Anyway, will head your advice……thanks so much!
Hi Ann, do you change the beater to the whisk type or you just use the normal one for beating cake? 1 more question – can I pour everything into the ramekins and bake say half an hour later? Will this affect the end result? See, Im asking questions again. Thanks for being so kind to answer all my questions
Ai Li, always use the ballon whisk to whisk egg whites or beating sponge cake. For beating butter, use the k beater. aiyo, please don't do that lah! Only bake when you got time, don't do half half OK!

Always see the magazine & newspaper wrote about lemon delicious & I have a newspaper cut out recipe which I have been keeping for years yet haven't taken any action! Yours look like light cheesecake to me, yum yum!
