Snowskin Mooncakes 冰皮月饼 (2012)
- Combine kao fen and snowskin flour (KWT Pinpe Premix Powder) in a big bowl and set aside.
- In a pot, add water with icing sugar and shortening together and bring them to boil until shortening melted, stir with a hand whisk.
- Pour the hot liquid mixture to the flour and use spatula to stir mixture to soft dough and leave dough to cool (you'll find the dough is quite oily at this time) then knead dough again to smooth, add more kao fen to it if the dough is still too sticky.
- Add different colour dough for different type of filling.
- Measure dough to 21g and wrap in 25g lotus paste or any other filling you prefer.
- Roll it into a ball and dust with some kao fen (糕粉) and press firmly into mould ~ unmould and store in an airtight container.
- Chill snowskin mooncakes before consuming.

- 冰皮月饼
- 材料:
- 50克 糕粉
- 230 冰皮皮月饼预拌粉粉 (出售于KCT)
- 50克 糖粉,过筛
- 46克 白油
- 300克 香兰叶水 (用4片香兰叶打结和500毫升水,一起煮滚待凉)
- 适量的糕粉
做法:
- 将冰皮粉和糕粉混合在一个大碗里,备用。
- 300克香兰叶水,糖粉和白油煮滚至白油融化,搅匀。直接倒入粉类,用橡胶刮刀翻拌成软面团,(这时的面团会很油)待凉。
- 然后用手把软面团再搓至光滑。如面团还带有一点粘性可撒些高粉,搓匀。
- 面团分成6份,加入少许你所喜欢的颜色,搓匀。
- 将面团分割成每份21克,馅料分割成25克,搓圆。
- 把面团包入馅料,搓圆。
- 在模具内撒少许糕粉,即可入模压花。
- 将月饼收进盒子,冷藏数小时即可享用。

- Roll colour doughs to long shape and gently press them together and roll to longer length. Cut to require size and wrap in filling paste.
- Roll it into a ball and dust with some kao fen (糕粉) and press firmly into mould ~ unmould it and store in an airtight container.
- Chill snowskin mooncakes before consuming.

the colours u use colouring?
Hi Ann, every year I followed your trusty Snowskin Mooncakes 冰皮月饼 (2012) recipe to make my durian snowskin moonies. This year, however, KCT stops carrying the Taiwan Pinpe powder (green packing shown here). I had no choice but to buy its inhouse KCT premixed snowskin powder this year to make snowskin moonies. I was told by KCT that their inhouse premixed powder consists of Taiwan Pinpe powder plus the usual local Kuo Fen (fried glutinous flour) powder in the packet. I am a little nervous to try this new premixed next week. Hope I will be successful in this new attempt otherwise, all my durian fillings will go to waste.
Hi Priscilla, I’ve not been to KCT in the past 3 years cos I’ve moved to the northern side of SG and is quite far away from my home. I only went to PH and Sunlik. You can try a small portion of their premix to test.
Hi Ann, just now at Kwong Cheong Thye trying to get the Taiwan pinpe snowskin powder but stock will only arrives after mooncake festive which does not make sense at all. I think KCT not bringing in now because the shop is trying to promote its own inhouse premix mooncake powder. Ann, do you know where I can buy similar Taiwan pinpe powder (in green packaging showed in your recipe here)?

Hi Priscilla, I think most probably due the (Covid-19) pandemic situation now, there might be late shipments from Taiwan. You can check with Sunlik. They have another brand that I’d tried last year. Is not bad too.

Thanks Ann for the recommendation. I think it’s not due to the pandemic, I think KCT is promoting its inhouse premix. Okay, where else can I get the premix you got from Sunlik? I don’t patronize Sunlik.
Hi Priscilla, I seldom go to KCT nowadays and never tried their inhouse premix before. You can try PH premix.

Could you please advice if we should boil 300ml of Pandan water + 25g icing sugar + 23g shortening together and use only 150ml from this mixture?
Or should we boil and measure 150ml from the pandan water then add icing sugar and shortening?
Hi Adeline, you should boil more of the pandan water then measure to 300ml. Can keep the remaining pandan water in the fridge for a few days. I usually boiled 1 litre of pandan water, so that I can use it whenever I want to make more snowskin mooncakes.

Went to KCT and they have two versions of the pre mix snow skin powder. One is transparent packaging and is packed by KCT, while the other packaging is the one (green colour) as shown in your above photo. KCT staff claimed the green packing is from Taiwan. May I know if you have used before the packing from KCT. Any difference from the Taiwan import package (green colour) . Thank you

Hi Irene, Not sure whether there are any preservatives in the premix snowskin flour. Don’t think is suitable to place the snowskin in the freezer because the dough skin will dries up and cracks.

Hi Ai Li, After you placed the dough inside the mould, place it flat on the table and pump it a few times before releasing the mooncake.

Thanks for the recipe. Just want to confirm if the measurement of the ingredients that you stated for the dough will produce about 250g-300g of dough? I’m using a 75g mould. Any recommendation for the best ratio of dough to filling?

Hi Eve,
You can use 35g for the dough and 40g for the filling. You can adjust the thickness for the dough and filling if you find them too thick or too thin.

Hi Christine, The KCT pinpe premix is only available at their shop. If you want to use PH brand premix, then you’ve to follow their recipe printed on their packaging. I’ve never tried PH premix before.

Hi Kym Qua, The mould size is 50g and you can make about 30 pieces in one recipe.
I think I have said it before but you do make the prettiest cakes I have ever seen… A lot of the ingredients you use are really foreign to me and I'd probably mess it up to no end but it looks beautiful!

For making snowskin must use cooked glutinous flour that is koufen. You can buy the premix, it is easier to handle. Using plain flour, will get a touch mooncake.
