Prawns In Dark Sauce 酱油虾
Ingredients:
320g Large Prawns
1 stalk Spring onion – cut to long length
some shredded ginger
some fresh chilli (optional)
1/4 tsp Salt
1/4 tsp Sesame oil
1/2 tsp Sugar
1 tsp Light soya sauce
1 tsp Dark soya sauce (Kwong Cheong Thye Brand)
1 tsp Oyster sauce
Mix all seasoning in a bowl with 60g water.
Method:
- Wash and clean prawns. Pat dry prawns with kitchen towel and season with little salt & pepper.
- Shallow fry prawn with oil till cooked, dish up.
- With little oil in frying pan, add shredded ginger and saute for few minutes then pour in the seasoning follow by prawns and spring onion.
- Stir fry well till sauce almost dries up.
- Dish up and serve immediately.

Yum! I love prawns with the head on… even though I don't eat the heads! I've tried, but just can't get myself to like the heads.

Peachkins: Yes, especially with that sauce. Maybe you can add more sauce when you can this dish.
Wenn, Shushma, Mausi: Yes, most people like prawns. And I think now prawn is the cheapest in the market compare to chicken and meat. I bought this for $10/kg, sometime even $8/kg in Chinatown market.

Pearlyn: Yeah, this brand is a good one. Even Ah Yat (阿一) use this brand.
Sonia: I think the dark sauce must be thick enough, so that the dish will give a very wonderful flavour…like braised pork.

Sadly, we do not have much variety here in these New Hampshire woods for Asian style food products (sad face here). I know I would enjoy this dish VERY much. It looks and sounds wonderful! Delicious photo!!
