Steamed Chicken Wings in Black Bean Sauce豉汁蒸鸡翅
1/2 tbsp Garlic – chopped
1/2 tbsp Ginger – shredded
1 stalk Spring onion – cut 2″ length
1/2 tbsp Chilli – chopped (optional)
Seasoning:
1/2 tbsp Fermented black bean-wash and roughly chopped (豆豉)
1/2 tbsp Fermented soya bean paste (豆酱)
1 tbsp Light soya sauce
1 tbsp Oyster sauce
1 tbsp Shaoxing wine
1/2 tbsp Corn flour
1 tsp Sugar
1 tsp Sesame oil
3 tbsp Water
dash of pepper
Method:
Combine all ingredients and seasoning, marinate for 1 hour or more.
Steam at high fire for 30 mins or until the chicken wings are well cooked.
Serve hot with rice.
note: cover chicken with cling wrap when steaming

I never tried steamed chicken in the combination of fermented black bean and soya bean paste before, and it sounds interesting. Might want to give it a try 🙂 I previously got my hands on steamed chicken in the combination of preserved wet plums and preserved black beans and it tastes really good!
