Stir Fried Shredded Pork with Sweet Bean Paste 京酱肉丝
This savoury sweet and tasty Stir Fried Shredded Pork with Sweet Bean Paste (or Jing Jiang Rou Si 京酱肉丝) goes really well with plain porridge or white rice. It is a popular dish in northern China. The tender shredded pork well coated with the sweet bean paste (甜面酱) gives the dish a deliciously rich flavour. Most of the ingredients needed are readily available in a Chinese family kitchen (I got the sweet bean paste at People’s Park Complex – First emporium). Just marinate the pork with salt, rice wine, sesame oil, cornstarch and egg white (cornstarch and egg white will tenderize the meat) for about 15-30 minutes. Then stir fry the pork till cooked in a couple of minutes and dish up. Bring sweet bean paste seasoning to a boil, and stir fry well together with the precooked pork till the sauce almost dries up. Dish up and enjoy with some shredded cucumber!

Stir Fried Shredded Pork with Sweet Bean Paste
Ingredients
- 300 g pork loin
- 1 small cucumber - shredded
Marinade ingredients
- 1/2 tsp salt
- 15 ml rice wine
- 1/2 tsp sesame oil
- 1 egg white
- 1 tbsp cornstarch - plus 1 tbsp water, stir well
Sweet Bean Paste Seasoning
- 2 tbsp sweet bean paste
- 1.5 tbsp light soy sauce
- 2 tsp dark soy sauce
- 1 tbsp sugar
- 20 ml water
Instructions
- Trim away the white skin layer from the lean pork and cut to strips. Add in marinade ingredients and massage well until all liquid is well absorbed.
- Drizzle some oil over it and cover with clip wrap. Chill in the fridge for 20 minutes.
- Cut cucumber to strips and place on serving plate. **can also use spring onion
- Combine all sweet bean paste seasoning ingredients together and stir well.
- Heat up frying pan with 2 tablespoons of oil. Stir well chilled shredded before pouring into pan. Quickly stir fry well until shredded pork separated and changes to white, dish up.
- Clean pan, add 2 tablespoons of oil at medium heat and pour in sauce, stir well and in a few seconds the sauce started bubbling. Then add in precooked pork. Again quickly stir fry till shredded pork darkened and sauce almost dries up. Dish up on serving plate together with shredded cucumber and serve immediately.

- 材料:
- 300克 里肌肉
- 1条 小黄瓜,切丝
- 腌制材料:
- 1/2茶匙 盐
- 15毫升 米酒
- 1/2茶匙 麻油
- 1颗 蛋白
- 1汤匙 玉米淀粉 + 1 汤匙水,混匀
- 甜面酱汁
- 2汤匙 甜面酱
- 1.5汤匙 酱请
- 2茶匙 黑酱油
- 1汤匙 砂糖
- 20毫升 清水
- 做法:
- 将猪肉的那层薄薄的白部分切掉然后把肉切成丝(不要太细)。然后放入腌制材料,充分把混合物抓匀至水分完全吸收到肉里,这样能让肉质软嫩多汁。
- 最后滴入几茶匙食油在肉上面,盖上保鲜膜放进冰箱冷藏约20分钟。
- 切好的黄瓜丝铺在盘子上备用 (也可以用青葱)。
- 甜面酱料放入小碗中搅匀。
- 从冰箱取出猪肉,用筷子稍微瓣开猪肉丝。加热炒锅,加入2汤匙食油,倒入猪肉丝,速迅炒开猪肉丝至泛白即可起锅。
- 擦干炒锅,加热放入2汤匙食油转入中火,甜面酱汁下锅拌匀至开始有气泡时就把猪肉倒入,快速翻炒拌均匀至肉丝上色即酱汁收干了差不多就起锅盛在黄瓜丝上即可享用。
