Bacon Potato Cake with Cheese
Here is the recipe
Bacon Potato Cake with Cheese
- 500g Potatoes
- 2 pcs Streaky bacon
- 1 medium size Onion
- 2-3 Cheese slices
- Seasoning
- 1 tsp Ground pepper
- 1/2 tsp Dried mixed herbs
- 1/2 tbsp Corn flour or add a little more if you find the potato mixture still a little wet
- 1/2 tsp Salt (optional)
- After washing potatoes, cut to wedges and submerge it in a pot of water and cook over high heat for 20 minutes before removing to cool or microwave potatoes till soft.
- Peel potatoes and mash it with a fork.
- Mince bacon, onion and cut cheese to small pieces separately. Heat olive oil in wok over high heat, then fry onion till fragrant, remove and set aside. Then remove oil from wok, stir-fry bacon for 30 seconds before turning off heat.
- Add bacon and onion into mashed potato. Add salt, ground pepper, dried mixed herbs and corn flour, mix well.
- Oil your palm with some olive oil before flattening a fish-ball-sized mashed potato in your palm. Wrap up the cheese, round it then flatten it into a potato cake.
- Heat a thin layer of olive oil in flat frying pan over high heat. Add potato cake and switch to medium heat to fry each side to golden brown.

Kitchen note: you can make a healthier choices ~ substitute tuna for streaky bacon (Use tuna canned packed in water, remove water and add some salt to taste).

Hi Jovial, thanks for trying this potato recipe.
I am using US Russet potato and find it OK when frying, maybe next time when you make this again you can add some plain flour into it or make into croquette..that is dip the potato with some flour, egg and breadcrumbs then deep fry it. please refer to my Potato croquette under snack.

I make something similar but it has minced meat instead of bacon. Your combination sounds very tasty too and those pictures are awesome!

Hi Alina, As there is bacon in it, I'm afraid there will be too much oil while baking. I think pan fry with little olive oil is better.
