The way she made the birthday is exactly the same method as mine. Not easy to put on video because you need to put the cake in and out of the fridge often. Most important thing is practice. Just try one for yourself, you will know the tricks.
No problem to put sponge cake in the freeze, the cake will remain as it is unless you have overbaked the cake.

If the cake is frozen, wont it change the texture of the cake? Will it not start softening once refrigerated??

The topping is whipped fresh cream (not too stiff otherwise very difficult for spreading). After you spread the whipped cream, must freeze the cake first before you transfer the image on top.

the cream at the top of the cake did u use the non-diary whipping cream?
how to put it on so nicely? do u put it on the cake after u whipped to cream up (stiff peak)?

Bad in writing on cake. So also use transfer image to do the letter words.
