Chicken Thigh with Rosemary and Garlic
When I saw the chicken recipe from a food magazine recently, I immediately bookmarked the recipe and cooked this tender and juicy chicken meal for my family two days ago. Another great thing about this recipe is that it is easy and fuss free, preparation was about 15 minutes and cooking time was about 20-30 mins. Best of all there were minimal bowls and utensils to wash. :))
Here is the recipe (serves 4)
4 pcs Chicken thigh deboned
Some rosemary
8-10 cloves garlic, peeled and sliced
2 large Potatoes, peeled and cut to cube
2 large Carrots, peeled and cut to cube
4 tbsp Olive oil
Seasoning (mix well)
Some Cajun seasoning or chilli powder (**omit salt if using cajun seasoning)
3-4 tsp Salt
Some pepper
Method:
- Preheat oven at 180C.
- Put carrots and potatoes in microwave till just cooked and drain.
- Pat chicken thighs dry with kitchen towel and rub with mixed seasoning.
- Heat olive oil in a flat frying pan and sear chicken thighs with the skin facing down until golden brown. Flip chicken thighs and sear the other side for 1-2 mins. (I made extra chicken wings with the same seasoning) Dish up and set aside.
- Using the same pan place carrots and potatoes in it, sprinkle some cajun seasoning and pepper on it. Fry till aromatic.
- Poke a small knife into chicken thigh skins to create little openings and stuff with garlic and rosemary.
- Put chicken thighs, chicken wings, carrots and potatoes in a baking tray or pan, pour the remaining olive oil from frying pan. Bake in oven for about 20 mins or fully cooked.
- Serve immediately.

Jeyy, yes no whipping added. Of course you can omit the apricot gel.
It is quite difficult for me to tell you which cheesecake to make because the method is almost the same. Just remember don't whisk the egg whites till too stiff.

This is what I got from the website for cajun seasoning.
table salt, 26 oz
cayenne pepper, 5 tbs
black pepper, 3 tbs
onion powder, 3 tbs
garlic powder, 3 tbs
chili powder, 3 tbs
thyme, 1 tbs
sweet basil, 1 tbs
bay leaf, 1 tbs
Cajun seasoning is available at more supermarket. You can add your own seasoning with the same method and I think some kids don't quite the flavor of rosemary.

I love how you used rosemary. It's one of my favourite herbs, and together with garlic, it's simply perfect! I can just imagine how good it tastes. I made rosemary and mustard chicken once and really liked it. I'd love to try this!

Love this fuss free recipe. I used to bake chicken thigh in oven with all types of marinades. That's sometime ago. I miss it now.
