Colourful Salad 缤纷莎拉
Prepared this healthy colourful salad with leftover cabbage, carrot and some fresh fruits as light lunch yesterday. It was so refreshing and satisfying that I almost finished up the whole bowl all by myself! In fact, there’s no exact measurements for the ingredients, just chop all the ingredients and toss them well with lemon juice and mayonnaise. Then serve.
- about 300g cabbage
- 1 stick carrot
- 1 red apple
- lemon juice
- red/yellow kiwifruit
- lemon juice to taste
- mayonnaise to taste
- coriander leaves
- Chop fruits into pieces and shred cabbage and carrot finely.
- Toss well with chopped coriander leaves and 1 - 3 tablespoons of lemon juice.
- Add mayonnaise to taste, mix well to combine and serve immediately.
