- Ingredients:
260 plain flour
170g sugar syrup
50g peanut oil
1tsp alkaline water
1/8tsp egg yellow colouring - 材料:

50克 花生油
1茶匙 碱水
1/8茶匙 蛋黄色素
皮 60克 内馅 100克 (做11个)

#Ann, noticed u have 2 type of traditional mooncake recipe (1 if purely for traditional mooncake and another one for the “koong chye peang”, which can also be use for traditional mooncake. What’s the difference between the two?
Hi Rowena, Both are the same recipe. Only different is the oven temp and baking time.

Hi Ann, I tried your receipe for baked piglets, I used canola with sunflower oil instead of peanut oil but the dough turns out to be oily sticky and hard to shape. Should I cut down the oil or increase the flour? By how much in your experience? Thanks! I love your piglets, very nicely shaped
Hi Lynn, You must firstly blend the sugar syrup, alkaline water and oil very well (can blend for a minute) before pouring into the flour. (can use any type of cooking oil) Yes, you can add more flour if you find the dough is still very soft but not oily.

No, alkaline is mixed with baking soda. You may google search how to make alkaline water online if it is not available at the grocery store.

I forgot brush egg yolk on the mooncake.
the surface look more a little bit pale.
but the taste was so good.
then the second time.
I brush egg yolk. Hmmm…
The surface become crack.
may I know why it can happen??

Hi Junic, You have brush too much egg wash on the surface of the mooncake. So the mooncake looks crack after baked. Better leave it without egg wash 😀

Hi Rachel, No problem to use light corn syrup or golden syrup. The sugar syrup that I used was caramel sugar syrup, is darker in colour.

Good morning Ann, I noticed you normally used Kou Fen mixed with KCT Pinpe Premix Powder to make your snowskin moonies which yielded a good dough. Are you able to advise me how many days can sknowskin stay soft without going stale using your method. So far, I'd made snowskin moonies using Kou Fen but very much like to try your method of mixing Kou Fen with pinpe premix powder.BlessingsPriscilla Poh

If you find it troublesome to buy thru Taobao, you can check with SSB Supplies on Facebook. SSB can buy the moulds for you. Just leave her message to check the price.
