Honey Green Tea Jelly
This Honey Green Tea or Matcha Jelly is another healthy and an easy to do dessert.ย I didn’t add any filling like red bean/azuki paste into the jellyย as I prefer to have the light delicate refreshing green tea and honey flavour. They taste so perfect after chilling. I poured the jelly into a 8 inch square pan and sliced it before serve. But if you’re leaving the jelly at room temperature for more than 30 minutes, it is better to make the jelly into serving cups as gelatine can melt easily in our hot weather. Although I’ve added little agar agar powder into it, the jelly was still very soft. If you’re a great of fan of green/matcha tea, have a try on this jelly. I’m sure you will love it. Ingredients
- 800g Water
- 65g Sugar
- 2 tbsp Honey
- 3g Green Tea powder (used matcha powder from SL)
- 20g Gelatine powder soak with 3 tbsp water for 2 minutes
- ½ tsp Agar agar powder
Instructions
- Soak gelatine powder with 3 tbsp water, set aside.
- Mix matcha powder with 2 tbsp hot water, set aside.
- Measure 800g water in a small pot and add honey, stir well with a whisk.
- Pour in sugar and agar agar powder, stir to boil untill sugar dissolved at medium heat.
- Add soaked gelatine, stir well with a hand whisk and lastly add the matcha mixture into it, stir liquid to boil again.
- Strain the liquid through a fine sieve directly into 8 inch square pan or serving cups.
- Leave to cool down completely and chill in refrigerator for 2-3 hours before serve.

Hi Kah Chin, wonder how much gelatin have you added? I always like to add some agar agar powder together with the gelatin, to get a little firm texture.

Hi Ann,Like to ask you one qu. I did the Honey Green Tea Jelly with gelatine (add more agar agar powder according to your ans to one of the fans).But the jelly that I do out, it have a layer of darker colour at the bottom, why it is like that. It looks diff from your picture. Are you able to explain. It still taste ok, just my family ask why there is diff colour..ThanksWendy

The problem with the darker colour at the bottom is because the green tea powder cannot easily dissolved in hot water that was why I said 'strain liquid'. It is better to use a fine sieve or you can use those oil strainer paper for kitchen so that the powder will not go through it after boiled.

this looks awesome. My son doesn't like honey. So rather than using white sugar, can I use brown sugar mix with gula melaka (dark palm sugar)? I wonder what this would taste like? of course, these sugars will change the colour of the jelly.
Hi Violet,Very sorry that I've missed your comment.You can add white sugar to replace honey but not gula melaka. I think gula melaka will cover up the match flavour.

I don't quite remember how many pieces I cut, think around 20 pieces but also depends how big the sizes you want.

I haven't tried this b4 but I can imagine that I'll certainly like it! Combining both the agar-agar powder & gelatine powder is new to me too, thanks for sharing!
Jessie, combining the two types of powder together make the jelly more firm but I think I did not add enough agar agar powder into it. But it is all right to serve in cups, the soft jelly really taste good.
