Peanut Butter Cookies 花生酥饼 CNY 2015
This peanut butter cookie recipe had been shared on the Facebook baking group and its easy method of preparation caught my attention. Peanut butter is being used in this recipe instead of peanut powder which has to be made from scratch. I love this peanut butter cookie as it’s not too sweet but fragrant and melt-in-your mouth. Definitely going to bake more for coming Chinese New Year.

Ingredients
- 180g Peanut butter (creamy)
- 50g Peanut oil
- 85g Icing sugar
- 250g Plain flour
- 1 egg yolk beaten + 1 tsp water
Instructions
- Combine peanut butter, peanut oil and icing sugar together, stir well.
- Sift in flour and knead to soft dough. (add a little more oil if the dough is too dry)
- Pinch off some dough and lightly form into a ball (about 12g) and place onto a baking sheet. Brush them with beaten egg wash.
- Bake in preheated oven at 150 deg C for about 15 minutes.
花生酥饼
材料:
- 180克 花生酱 (油滑花生酱)
- 50克 花生油
- 85克 糖粉
- 250克 面粉
- 抹表面:1个蛋黄加1茶匙水
做法:
- 把花生酱,油和糖搅拌均匀。
- 筛人面粉,搓成面团。(觉得面团太干的话,可多加一点油)
- 把面团搓成小圆球 (约12克),排放在以铺了不粘烘焙纸上,涂上蛋液。
- 放进预热烤箱以150度烘烤15分钟即可。

Hi Shirley, the cookies are not crunchy type. Best to consume within 2 weeks.

Dear AnnI used your Peanut Butter Cookies yesterday and cookies turned out so yummy and good that all the China workers in the foodcourt owned by my sister gave their thumbs-up. I told them I will make some more for them very soon. As I do not have peanuts in my pantry, I topped the cookies with two chocolate chips and the combination was good – chocolate goes well with peanut.I happened to chanced upon peanut butter (340gm) sold at Prime Supermarket at S$3.85 for 2 bottles, just in time! Hi CS,You meant that the cookie didn't get a nice yellow surface after baked? This is because the peanut butter is quite oily, that's why the egg wash doesn't stick much to the cookie.

Hi Jessica, Just buy any brand that you usually used for spreading your bread.
Ann , reminds me of almond cookies here , the one in a plastic jar with red cover ?! Don't really like almond cookies but these peanut butter ones are worth baking 😀

Hi, Peanut oil is available at all supermarkets. Yes, you can use any type of vegetable oil but not as fragrant as peanut oil.

Hi Annthese cookies look so yummy but problem is, i don't have peanut oil so would like to ask if i can replace w corn oil instead. also, is it okay to bake these cookies at 170 degrees but for a shorter time? reason being, the lowest temp of my microwave cum fan forced oven is 150 degrees which is abt 170 degrees using convention oven…thksregardsoctopusmum
Hi Octopusmum, Yes you can use corn oil but the cookies will not so fragrance. Sorry that I'm not sure about using a microwave temp to bake cookies. You have to test it out yourself.Ann

Hi Sheryl, I think for cookies can use top flour to replace plain flour but sorry to say I don't know about the difference of the flour 🙂 Taste wise should be about the same.
