Pineapple Slice
>
After the Chinese New Year, I still have some leftover pineapple filling inside my fridge. In order to clear the filling quickly, I baked it with this Pineapple Slice yesterday.
You might like this~~the texture is moist & soft inside, crisp on the top and very fragrant too.
Ingredients:
Crumble Topping
30g Soft butter
35g Plain flour
30g Coarse sugar
1/2 tsp Cinnamon powder
Mix flour, cinnamon powder and sugar together in a bowl.
Use finger tips to rub the soft butter into the flour until the flour resembles fine breadcrumbs and set aside.
(note: use half of this crumble if you don’t want the topping to be too sweet)
200g Soft Butter
40g Sugar
3 Eggs (sorry typing mistakes, is actually 3 eggs, 60g each)
300g Pineapple Jam (leave in room temperature before use)
90g Plain flour
2 tsp Lemon juice
Method:
- Beat butter, sugar, pineapple jam and lemon juice until light and creamy (about 5 mins).
- Slowly add in eggs, one at a time.
- Scrape bottom of the mixing bowl and continue beating at low speed, then gradually add flour into it and stop machine.
- Use spatula to fold the batter well and pour it into a prepared 8″ lined cake tin tray.
- Sprinkle crumble evenly over the batter and bake at pre-heated oven 170C for about 30 mins.
- Enjoy!
Hi Ann, I baked this last nite. Wow! It is good! Its so moist! However, mine is more sour then sweet; guess its the pineapple jam. I got mine from Phoon Huat. I know there are various jam grades from Phoon Huat, which one did you buy? Can show me picture of the packaging if you have Sorry for being troublesome!
Hi Ai Li, you're very 勤劳!hahaa… I also used PH pineapple jam (the good grade). If it is too sour, you omit the lemon juice.
they are very hungry these little squares, like a lot!
Katy: Thank you! Let me pack this in a box and mail it to you ;DD

Sandhya:Thank you for visiting. You've nice blog too.
Cilia: This recipe is not suitable for muffin. The height of this slice is about one and half inches, if you make into muffin the batter will be too heavy and also too sweet for big bite. Pls take note: is 3 eggs not 2 eggs, typing mistake.
Anyway, are you the one who tried my deep fried tofu? Thanks 🙂
Miranda: Thanks. Is really good to make use any leftover.
Yum.
I have a Pineapple sitting on my counter calling my name. LOL
Anncoo,
I shall follow your recipe and make muffins out it
