Pistachio Muffins 开心果玛芬
These Pistachio Muffins are delicious and are a perfect snack for any time of the day. It has a nutty fragrance from the pistachio nuts and ground almond and not too sweet. Mixing of the ingredients is super easy without the need of an electric mixer while the baking time is only about 20 minutes. These delicious muffins are best to serve warm but also can be stored in an airtight container overnight at room temperature for your morning breakfast too.

Pistachio Muffins
Ingredients
- 150 g cake flour or plain flour
- 1.5 tsp baking powder
- 30 g almond powder - ground almond
- 70 g pistachio nuts
- 2 tbsp rice flour
- 70 g caster sugar
- 40 g corn oil
- 100 g fresh milk
- 1 tsp vanilla extract
- 2 eggs
Instructions
- Blend pistachio nuts and rice flour to fine. The flour helps the nuts to grind evenly
- Sieve flour and baking powder together and mix well with almond powder. Add pistachio powder and mix well again.
- In an another bowl, add sugar, oil, milk, vanilla extract and eggs together and stir well. Pour in flour mixture and fold well with a rubber spatula.
- Scoop batter into muffin pan with lined cupcake liners 3/4 full (makes 8) and add some pistachio nuts on top. Bake in preheated oven at 180 degrees for 20 minutes or until a skewer inserted into cake comes out clean.

- 材料:
- 150克 底筋面粉或中筋面粉
- 1.5茶匙 泡打粉
- 30克 杏仁粉
- 70克 开心果仁
- 2汤匙 粘米粉
- 70克 细砂糖
- 40克 玉米油
- 100克 牛奶
- 2个 全蛋
- 做法:
- 将开心果仁和粘米粉一起搅打至粉状。加入粘米粉一起搅打可促进坚果磨的更细腻
- 面粉和泡打粉过筛入碗中,加入杏仁粉混匀,然后加入开心果粉类,再混合均匀。
- 另一个碗中,放入砂糖,油,香精和鸡蛋,充分的搅拌均匀。然后倒入粉类,用刮刀翻拌均匀即可。
- 把面糊舀入纸杯至3/4满 (可做8个)及加些开心果仁在面上,放进预热烤箱180度烤约20分钟或竹签插入蛋糕内部,拔出没有粘糊,就表示熟了。
- 玛芬温热的时候享用最好,也可以收进密封盒常温至隔天当早餐也不错。
