Pork Ribs with Fermented Black Beans 豆豉排骨
These Pork Ribs with Fermented Black Beans is a delicious, savoury and flavourful dish that goes well with white rice. It is another quick and easy dish to prepare at home and all you have to do is to marinate the pork ribs for an hour or more so that the flavours of the marinade will be infused into the ribs. It is best to get the pork ribs with some fats, so the meat will be tender and juicy after cooked. It only takes about 15 mintues to cook this in an electric pressure cooker. I’m using Mayer brand pressure cooker and I think other brands of pressure cooker share quite similar functions. I didn’t use the rice cooker this time but you can do so if you want. It will take a longer time to cook the pork ribs till tender in the rice cooker, maybe 30 to 45 minutes.
Pork Ribs with Fermented Black Beans
Equipment
- Pressure cooker
Ingredients
- 500 g pork ribs with fats - chop to smaller pieces
- 3 pip garlic
- 2 slices ginger
- 2 stalks spring onion
- 1 tbsp fermented black beans
- 120 ml water
Seasoning
- 1 tbsp light soya sauce
- 2 tsp dark soya sauce
- 1 tsp sesame oil
- 1/2 tsp black vinegar
- 1 tsp chicken powder
- 1 tsp sugar
- 1/2 tbsp corn flour (starch)
- 1 tbsp hua tiao chiew - Chinese cooking wine
Instructions
- Rinse pork ribs and pat dry with kitchen paper. Then chop pork ribs into smaller pieces and marinate with the seasoning at least for an hour or longer (so that the flavours of the marinade will be infused into the ribs).
- Place spring onion into pressure cooker, followed by pork ribs, fermented black beans, garlic and ginger. Lastly pour in the water. Cover lid and start to cook until the time is up in your pressure cooker (I cooked mine in the electric pressure cooker pot for about 15 minutes).
- When served, garnish with some cut chillies and spring onion.

今天这道豆豉排骨,很入味又下饭! 做法简单,把腌制好的排骨放入高压锅里,加一点水焖煮15分钟就可以了。
材料:
- 500克 排骨 (排骨带有一点油比较好吃)
- 3瓣 蒜头
- 3片 姜
- 2根 葱
- 1汤匙 黑豆豉
- 120毫升 水
腌料:
- 1汤匙 酱请
- 2茶匙 黑酱油
- 1茶匙 麻油
- 1/2茶匙 黑醋
- 1茶匙 鸡精粉
- 1茶匙 白糖
- 1/2汤匙 玉米淀粉
- 1汤匙 花调酒
做法:
- 排骨清洗干净后用厨房纸巾擦干水分,剁成小段放在碗中和腌料一起腌制最少一个小时或以上。
- 将葱摆入高压锅里,铺上腌制好的排骨,黑豆豉,蒜头和姜片;倒入水就可以盖上盖了(我用的是电子高压锅,15分钟就煮好了)。
- 上桌前,放上少许辣椒和葱粒即可享用。
**这道料理也可以放入电饭锅煮约30-45分钟至排骨变软。

Hi Charlotte, you can cook this dish in a pot and simmer for about 45-60 mins till pork ribs are tender.
