Green Tea Cheesecake (non-bake)
Ingredients:
Biscuit crumbs : Use 150g Marie biscuits and 150g Melted butter
Method refer to Black Forest Cheesecake
Cream Cheese Ingredients:
250g Cream cheese
75g Icing sugar
70g Whipping cream or fresh milk
4g Green Tea powder
6 pcs Gelatine leaf
300g Whipped fresh cream
1/4 tsp Jasmine tea essence
Method:
- Grease and line a 9″ cake tin and press biscuit crumbs at the base of the cake tin.
- Boil whipping cream and green tea powder at medium fire until thoroughly mix and sift-add 1/4 tsp Jasmine tea essence, leave to cool.
- Soften gelatine leaf in cold water, squeeze excess water and put in double boiler until gelatine leaf melted.
- Beat cream cheese and icing sugar together and slowly add in whipping mixture until smooth, then add in melted gelatine, mix well.
- Lastly fold in whipped fresh cream with a hand whisk, fold well and pour into cake tin.
- Let it set in refrigerator for at least 4 hours or overnight.

I know this was addressed earlier, but Sunlik's site appears to be pretty bare-boned, and Alibaba sells Jasmine Tea Essence in 10kg quantities. Our Asian market does not carry Jasmine TEA Essence, but I DID end up buying Jasmine Essence, and I was wondering if this would do…in a smaller quantity, perhaps? Please advise,Crystal
Hi Crystal, You can omit the jasmine tea essence if you can't find one. Is alright to add a little more of green tea powder in this cake.

Hi Rachel, You can use half recipe for 6 inch cake pan. Actually this cake is quite low and really very big.

If you use gelatin powder, you got to soak about 20g gelatin powder with 3-4 tbsp water for few minutes and melt it under double boiler.Are you using fresh topping cream? You must use whisk to whip up the cream.Please leave your name behind, so I can address you.

Hi Caca, Just place a cake stencil on the cake and dust the icing sugar or snow powder on top. After dusting remove the cake stencil gently.

Hi Michelle,Snow powder will not met nor sweet compare to icing sugar. But I really don't know what is the content of snow powder. Snow powder is available at at all ingredients shop here.

Yes, use the comb scraper. I really like to use this tool for most of my cakes like choc, mousse and birthday cakes. First of all place the cake on a turntable and hold the comb scraper up right on the cake. Start to turn the turntable at anti clock way and you get the nice round line.

Maybe you can add 20g of gelatine powder, but firstly you must melt the gelatine powder before putting into the cream mixture. When you whip up the fresh cream, try to whip a little stiffer not the soft peak.

Icing sugar and snow powder are different. You can get this from Phoon Huat.Yesterday I mentioned about the cocoa powder with with snow powder, the ratio is about 2:1Sorry I don't conduct classes but I'll try my best to answer all your questions.Happy baking!

Hi Lilian,I'm very happy that you try my recipe.Anyway for the topping, you can mix 1-2 tsp green tea powder with 2tbsp snow powder and dust on the cake. Becse snow powder is not sweet nor melt. This can be applied to other cakes as well, like cocoa powder with snow powder.I'm sorry that I did not type this in my recipe,will update now.
