Lemon Dessert with Lemon Curd
I love to use lemon in most of my baking, cooking and that’s the reason why I posted 2 recipes using lemons here and here to participate in this month’s Little Thumbs Up Event. Today is my 3rd post, Lemon Dessert with Lemon Curd. This recipe is adapted from the famous Swedish blog Linneas Pantry. I was searching for an easy lemon dessert the other day and I was attracted to Linneas’s beautiful Lemon Dessert. Please take a look at her beautiful post. The recipe is quite easy to follow but you need to stir the lemon mixture until almost thickened in a double boiler which took me a longer time to get to the right texture. In fact, my lemon curd is not very thick but it’s smooth and yummy and I simply can’t resist licking the residue from the spoon … hahaa. ย I’m sure nobody can resist not having a cup of this smooth and tangy Lemon Curd Dessert especially in our hot weather… gosh it hasn’t rained for almost 30 days! Really hope I can have more desserts everyday to beat the heat.

Lemon Dessert with Lemon Curd

Serves: 1 cup
Ingredients
- Zest and juice of 2 lemons (about 100g)
- 250g Granulated sugar, or add to your taste
- 2 Eggs (65g each)
- 75g Butter
Instructions
- Bring water to boiling point and and keep water at low heat. Combine lemon juice and sugar in a pot under double boiler and stir until sugar dissolved.
- Remove lemon juice from heat. Crack eggs into a separate bowl or cup, lightly beaten and stir in the eggs a little at a time until combined and add lemon zest into it. Bring the pot back under double boiler and stir continuously for 5-6 minutes (mine was around 12 minutes), until thickened.
- Strain the hot cream and stir in butter till butter melted and mix well, Pour into clean jar and allow to cool before putting it in the fridge.
Lemon Dessert with Lemon Curd (for one serving)- Adequate biscuit crumbs
- some blueberries and strawberries (cut strawberries to small pieces)
- -3 dessert spoons lemon curd for one serving
- Fresh topping cream (whisk to peak form)
- Assemble
- Add about 2 dessert spoons of biscuit crumbs into a small glass followed by the lemon curd. Place some blueberries and strawberries on to it and finish with whipped cream.
- Top with some chopped pitaschio or biscuit crumbs. Place the glass back to the fridge and chill for about an hour before serving.

Refreshing and so delicious! I made a small jar of blood orange curd the other day and used it to dip the cookies :-)) Just heavenly! Have to make some more with lemons.

Jessie, This lemon curd is very easy to make and can keep for about a week.You can prepare this dessert before your guest arrived. I just made two cups for only two in the family. Used the remaining lemon curd to make ice cream. Also very nice ๐
