Oreo Cheesecake 奥利奥芝士蛋糕
This baked Oreo Cheesecake is super light, smooth and delicious. Definitely a perfect cake to share with your family or friends. Oreo cookie pieces were added in the cheese filling ~ perfect combination ~. You have to fold the Oreo cookie pieces gently into the cheese mixture, so that the cookie pieces will not sink to the bottom of the cheesecake while baking. Then send it to steam bake for about 60 minutes at low temperature. For best result, chill the cheesecake overnight and slice it with a hot knife. Enjoy!

Oreo Cheesecake
Ingredients
- 227 g cream cheese - room temp
- 30 g soft butter
- 80 g dairy whipping cream
- 1 tsp vanilla extract
- 3 egg yolks - large eggs
- 35 g cake flour or plain flour
- 1 tbsp cornstarch
- 3 egg whites
- 1/2 tsp lemon juice
- 60 g castor sugar
- 40 g Oreo cookie pieces - without cream
Instructions
- Blend cream cheese and butter to smooth with a rubber spatula. Add vanilla extract and whipping cream in batches till combined.
- Drop in egg yolks one at a time until all well mixed. Then sieve in flour and cornstarch, fold well mixture and set aside.
- In another clean bowl, whisk egg whites till foamy with an electric cake mixer. Add sugar in batches and whisk to peak form. Use a rubber spatula to fold egg whites to cheese mixture in 3 batches. Lastly add Oreo cookies pieces and gently fold the mixture. Pour cheese mixture into 8 inch cake tin. (Line 8 inch cake tin and grease butter at the sides)
- Steam bake at preheated oven 140C for about 60 minutes and 150C for about 5 minutes till the top light golden brown.
- Run knife around rim of pan immediately after baking, so that the cake will not get a waist line. Leave cake to cool completely before removing from the cake pan. Chill cheesecake overnight and slice it with a hot knife. Enjoy!

- 材料:
- 227克 温室奶油芝士
- 30克 软牛油
- 80克 动物性淡奶油
- 1茶匙 香草香蕉
- 3个 蛋黄,用大鸡蛋
- 35克 底筋面粉或中筋面粉
- 1汤匙 玉米淀粉
- 3给 蛋白
- 1/2 茶匙 柠檬汁
- 60克 细砂糖
- 40克 奥利奥饼干碎 (不含奶油)
- 做法:
- 将奶油芝士和牛油翻拌匀至顺滑。香精和淡奶油分次加入,再拌匀。
- 加入鸡蛋,一个一个下,搅拌均匀,筛入面粉和玉米淀粉,再拌匀即可。
- 再另一个干净大碗,用搅拌机把蛋白和柠檬汁打至起泡,细糖分次加入, 打致硬性发泡。把奥利奥饼干碎加入蛋白霜,轻轻的翻拌即可倒入一个8寸圆烤盘。(底部铺油纸,傍边抹上牛油)。
- 用水谷方式140度烤60分钟,然后转换150度烤约5分钟至表层微黄即可。
- 烤好的蛋糕从烤箱取出。用小刀子沿著蛋糕的邊緣劃一圈,这样蛋糕就不会呈现出腰围了。蛋糕待凉后才脱模。然后收进冰箱冷藏至隔天会更加的美味。用热刀将蛋糕切片享用。
