Tomato Egg Pancake 番茄蛋饼
Made a simple quick breakfast, tomato egg pancake with leftovers. Using the handy ingredients that I always have in my refrigerator and pantry. It just takes about 8 to 10 minutes to cook this tomato egg pancake on the stove. The egg pancake is tasty with the juicy and tangy tomatoes mixed with prawns, crab sticks and spinach. So if you’re in a rush and short of time in the morning, this healthy easy to make pancake is definitely a good choice for you and your family to enjoy!

Tomato Egg Pancake
Ingredients
- 20 g butter
- 100 g onion - chopped
- 4 large prawns - optional
- 90 g crab sticks - imitation
- 100 g spinach
- 10 pcs cherry tomatoes - cut half
- 3 eggs - medium size, 65g egg
- 150 ml fresh milk
- 50 g shredded cheddar cheese or mozzarella cheese
- 1/2 tbsp minced garlic
- salt and pepper
Instructions
- Rinse spinach and drain away access water, then cut into section. Remove prawn shell and deveined. Season with little salt and pepper.
- Crack eggs into a bowl or cup, add milk and lightly beaten. Then add cheese and mix well with a pinch of salt and dash of pepper, set aside.
- Heat non-stick pan medium low heat and add butter. Then add onion and fry to soft. Add garlic and prawns add spinach, fry for a while. Add crab meat and cherry tomatoes ( I added more tomatoes). Spread mixture into an even layer. Pour in egg mixture to almost full.
- Cover pan with lid, turn heat to low and cook for about 8-10 minutes for the pancake to set. Occasionally, lift up lid to release hot air to escape.
Notes
- 20克 牛油
- 100克 洋葱,剁碎
- 4只 大虾 (可不放)
- 90克 蟹柳
- 100克 菠菜
- 10粒 小番茄,切半
- 3个 全蛋 (约65克鸡蛋)
- 150毫升 牛奶
- 50克 车打芝士(碎条)或莫扎里拉奶酪丝
- 盐和胡椒粉,适量
- 1/2汤匙 蒜末
- 菠菜冲洗干净,沥干水分,然后切段。大虾去壳洗净撒上适量盐和胡椒粉。
- 鸡蛋放入碗或杯中,倒入牛奶,轻轻搅拌。加入奶酪丝,少许盐和胡椒粉再搅拌均匀,备用。
- 中小火加热不沾底平底锅,放入牛油。把洋葱放入翻炒至软。然后放入蒜末,虾和菠菜,再拌几下。接着加入蟹柳和小番茄(我多加番茄)。把混合物铺平,倒入鸡蛋液至差不多满即可。
- 盖上锅盖,转换小火慢煮约8-10分钟至蛋饼至熟。。。中途把锅盖打开透透气。
- 可不放虾,多加蟹柳也很好吃。
