Ingredients
- (A)
- 45g Gelatine
- 800ml Water
- 225g Sugar
- (B)
- 230g Fresh cream
- 550g Durian flesh (roughly blend)
- 1 tub Durian Ice Cream (1 litre)
- a little yellow coloring
Instructions
- Soak gelatine powder with 4 tbsp of water for about awhile.
- In a pot, add water and sugar together, bring to almost boil and add in soaked gelatine.
- Use hand whisk to stir till the sugar and gelatine dissolved. Leave to cool.
- Beat up fresh cream till stiff and add in the durian ice cream, mix well.
- Mix durian mixture to the gelatine liquid with a hand whisk, stir to mix well.
- Lastly add in the durian flesh and little yellow colouring.
- Pour into cups and leave in the refrigerator for at least 3 hours to set.
- When serve, add some durian puree on pudding and Enjoy!

No Durian for me in Spain. My grandmother loved Durian…may she rest in peace.
I envy you having enough Durian to even cook with it. Durian was always a rare commodity so it was always eaten fresh or frozen and then it would be like ice cream. ๐
My husband would die if I start making durian pudding…, lucky that I am not a big fan of durian ;-).

Yes sure you can use any of this cream. The whipping cream is a cooking cream which no sugar contain. If you want to use whipping cream, I think need to increase the sugar.
Urgh ! I'm very confused , can I use thick cream or whip cream for this recipe ? So many types of cream , I'm really " Luan ! "

AAAAAHHHHH!!! Rushing over to your place right now! The first time I had durian pudding was in this Chinese restaurant in Singapore, and after that I visited that place a lot more often JUst for that pudding!
